Impossibly Easy Mini Blue Cheeseburger Pies image

Steps:

  • Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
  • In 10-inch skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked; drain. Cool 5 minutes; stir in blue cheese and Worcestershire sauce.
  • In medium bowl, stir baking mixture ingredients with whisk or fork until blended. Spoon 1 scant tablespoon baking mixture into each muffin cup. Top with about 1/4 cup burger mixture. Spoon 1 tablespoon baking mixture onto burger mixture in each muffin cup.
  • Bake 25 to 30 minutes or until toothpick inserted in center comes out clean and tops are golden brown. Ten minutes into baking, carefully open oven and sprinkle 1/2 tablespoon French-fried onions on top of each muffin. Close oven door and finish baking. Cool 5 minutes. With thin knife, loosen sides of pies from pan; remove from pan and place top sides up on cooling rack. Cool 10 minutes longer, and serve.

Steps:

  • In small bowl, mix sauce ingredients. Cover; refrigerate until ready to use.
  • In large bowl, mix burger ingredients until well mixed. Shape beef mixture into 16 patties, about 1/4 inch thick.
  • Place 8 patties in 12-inch nonstick skillet; cook over medium-low heat about 3 minutes. Turn patties; cook 2 to 4 minutes longer or until meat thermometer inserted in center of patties reads 160°F. Remove patties from skillet; cover to keep warm. Repeat with remaining patties.
  • With serrated knife, cut pita breads in half horizontally. Place patties on bottom halves of breads. Top each patty with about 2 teaspoons sauce, several slices of cucumber and strips of onion. Cover with top halves of breads. Serve immediately.

IMPOSSIBLY EASY MINI CHEESEBURGER PIES

This is soooooo easy! I got it from Bisquick's website. I left out the Worcestershre Sauce (didn't have any) & it made no difference. You can fill these with anything & they'll be wonderful. Will be great for a quick breakfast & they're portable. Watch them in the oven...I don't think mine were in anywhere near 30 minutes.
