Individual Yorkshire Puddings image

Steps:

  • Lightly coat 12 muffin cups with beef drippings.
  • Heat 3 T. beef drippings in small skillet over medium-high heat. Add shallot and garlic and stir to coat; cook, stirring frequently, until softened, 2-3 minutes.
  • Place flour, salt, eggs, the water, milk, parsley, and remaining beef drippings in food processor. Process just until blended. Transfer to mixing bowl and let stand at room temperature for 30 minutes.
  • Heat oven to 425 degrees.
  • Stir cooked shallot and garlic into batter. Fill prepared muffin cups two-thirds full with batter.
  • Bake puddings 15 minutes. Reduce heat to 375 degrees and bake until puffed and golden brown, about 15 minutes. Serve at once.

I never liked Persimmon pudding until I ate my mil. I used wild persimmons for years but the Japanese ones are larger and easier. Just be sure to use paper towels for cleanup as the persimmons will turn everything black.

  • Mix all ingredients together and bake at 350 for about 30 minutes or until brown and sides pull away from pan.
  • Makes 2 6 1/2 by 10 or one large pan.
  • To make persimmon pulp persimmons must be washed and mashed through a sieve, usually takes 3 or 4 Japanese persimmons depending on size and a large amount of wild ones.

2 cups milk
2 1/2 cups sweet potatoes, grated

1 1/2 cups sugar
3 teaspoons baking powder
1/4 teaspoon salt
1 1/2 teaspoons cinnamon

  • Scrub and pierce sweet potatoes. Bake at 350° for 1 to 1-1/4 hours or until very tender. , Cut sweet potatoes in half; scoop out pulp and place in a large bowl. Mash with milk and egg substitute. Stir in the brown sugar, flour, raisins, orange zest, pumpkin pie spice, vanilla and salt until blended. , Transfer to a 1-1/2-qt. baking dish coated with cooking spray. Cover and bake at 350° for 1-1/4 to 1-1/2 hours or just until top is set. Cool on a wire rack for 1 hour. Refrigerate for at least 2 hours. Serve with whipped topping.

  • In a large bowl, beat the potatoes, cream, egg yolks, lemon juice, lemon zest and spices until smooth. Fold in 2/3 cup coconut., In a large bowl with clean beaters, beat egg whites on medium speed until soft peaks form. Gradually beat in brown sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved., With a spatula, stir a fourth of the egg whites into sweet potato mixture until no white streaks remain. Fold in remaining egg whites until combined., Transfer to a greased 11x7-in. baking dish. Sprinkle with almonds and remaining coconut. Bake at 325° for 50-55 minutes or until a knife inserted in the center comes out clean. Serve warm, with ice cream if desired.

  • Allow to drain.
  • Discard the water.
  • Combine the potatoes, onions, eggs, flour, salt baking powder, pepper and butter together in a bowl.
  • Spoon into greased medium sized muffin tins.
  • Fill to the top.
  • Bake at 375F for 1 hour until brown and crusty.
  • Allow to stand on counter for a few minutes, then run a knife around the edge to loosen from the tin.
