IRISH PRIDE FLAG SANDWICH

My first sandwich challenge was to have the colors of the Irish flag which are green, white and orange included in a sandwich. So, the asparagus, eggs & orange pepper worked well together. It was my first time to try asparagus in a sandwich & it tasted delish. The only thing I didn't make it on was the bread...if doing again I would need a thicker bread. My bottom bread got too soggy half way through eating it. I even toasted it too. Well, it is certainly a healthy sammie and yummy too. I enjoyed making it and hope to pay tribute to my wonderful Irish heritage. Happy St. Patrick's day to you.

Steps:

  • Gather ingredients
  • I steamed my asparagus and then blanched it to keep it's green color. Saute your mushrooms in a pan with a little olive oil. Mix your egg whites together with the cottage cheese and pour on top of your mushrooms and cook till done. Season with salt and white pepper.
  • In another pan at the same time saute your orange peppers and sliced serranos in a little olive oil. Toast your bread in oven or toaster. Now assemble with asparagus on the bottom and then your egg mixture. Grate your fresh white sharp cheddar over you hot eggs so it will melt. Place your oranges and serrano peppers on top. NOw, mix your cayenne into your marmalade and spread on the top piece of your bread and place on the peppers.
  • I served this with plain hummus & added some green dye to it with veggie sticks that were flavored potato, tomato and spinach. The dessert was mini chocolate gobbs with green filling. The drink was Gatorade G2 tropical blend that had a wonderful green color to it & tastes good too.
  • Symbolism of the Irish Flag: The green pale in the flag symbolizes Irish republicanism dating back to the Society of United Irishmen in the 1790s. The orange represents the minority who were supporters of King William III, who was of the House of Orange and originally the Stadtholder of the Netherlands, had defeated King James II and his predominantly Irish Catholic army at the Battle of the Boyne in 1690. His title came from the Principality of Orange in the south of France that had been a Protestant bastion from the 16th century. It was included in the Irish flag in an attempt to reconcile the Orange Order in Ireland with the Irish independence movement. The white in the centre signifies a lasting truce between the two cultures and a living together in peace. The flag, as a whole, is intended to symbolise the inclusion and hoped-for union of the people of different traditions on the island of Ireland, which is expressed in the Constitution as the entitlement of every person born in Ireland to be part of the independent Irish nation, regardless of ethnic origin, religion or political conviction. 7 - stalks of asparagus
4 small white button mushrooms
2 small fingerling peppers or serrano (same thing)
2 - 3 tablespoon(s) fresh grated tipperary irish cheddar cheese extra sharp
1/3 cup(s) sliced orange pepper, sauteed
1/2 cup(s) or a little less of egg beaters (egg whites)
1 1/2 tablespoon(s) cottage cheese
2 tablespoon(s) orange marmalade
1/2 teaspoon(s) or less of red cayenne pepper
- white pepper and salt (season as desired)
2 slice(s) of thick sliced pumpernickel bread

In honor of St. Patrick's Day, my sandwich group Sandwiches, Sammiches & Sammies challenge was to create a sammie using the Irish flag colors green, white & orange. This was such a fun sammich to make and it was most delish! Happy Sammie Making, sw:)

Steps:

  • 1. gather all your ingredients. combine mayonnaise, tomato bacon dressing and capers in a bowl
  • 2. add a couple drops of red and yellow food coloring to 2 tbsp of evoo. brush the tops of buns and broil in oven for a couple of minutes
  • 3. meanhile, add chicken and bay leaf to a pot...single layer snug. cover chicken with wine and broth. bring to a boil and reduce to a simmer. simmer for 8-10 minutes. turn off heat and let chicken remain in the hot bath for 15 minutes or so
  • 4. deep fry broccoli and cauliflower at 350 degrees for 5-7 minutes or until the veggies are turning goldes brown. remove and drain oil
  • 5. add remaining evoo and greek seasoning to a bowl. toss broccoli and cauliflower in oil
  • 6. melt cheese on chicken breast under broiler..spread dressing on all bun halves...followed by chicken cauliflower & broccoli and top of bun...enjoy!

4 medium chicken breast halves, skinless and boneless
1 c broccoli florets
1 c cauliflower, florets
4 oz shredded italian cheese
1/4 c mayonnaise
1/4 c tomato bacon dressing
2 Tbsp capers
1/2 c white wine
1 1/2 c chicken broth-enough to cover chicken breast
1 large bay leaf
1/4 c olive oil, extra virgin-divided
1-2 tsp greek seasoning
4 hawaiian buns
red & yellow food coloring-makes orange

SAINT PADDY'S IRISH SANDWICH

This new rendition of a reuben is amazing. It makes my mouth water just thinking about it. Toasted sliced-sourdough, shredded corned beef, fancy mustard, and shredded cabbage in a light vinaigrette make this sandwich to die for (not just on Saint Paddy's).

Saint Paddy's Irish Sandwich image

Steps:

  • Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound until tender. Remove meat and let rest 15 minutes. Slice meat across the grain.
  • Whisk together olive oil, balsamic vinegar, mustard, salt, and pepper in small bowl. Place the shredded cabbage in a large bowl and pour the dressing over it; toss to coat the cabbage with the dressing.
  • Spread a layer of mustard on 6 slices of toasted bread. Place some shredded cabbage and corned beef on each slice and top with remaining slices of bread.

  • Preheat oven to 350. Line a baking pan with foil. Place rack on top of that. Place bacon slices on the rack.
  • Bake for about 30 minutes or until bacon is as crisp as you want it. It will crisp up a bit after removing it from oven. Now have a swig of Guinness while you grate your cheese.
