ST. PADDY'S IRISH BEEF DINNER

A variation on shepherd's pie, this hearty dish brings together saucy beef, mashed potatoes, parsnips and other vegetables. It's always the star of our March 17 meal. -Lorraine Caland, Shuniah, Ontario

Steps:

  • Peel potatoes and parsnips and cut into large pieces; place in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain., Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the cabbage, carrots, thyme and Worcestershire sauce., In a small bowl, combine the flour, tomato paste and broth until smooth. Gradually stir into meat mixture. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until vegetables are tender. Stir in the peas, 1/4 teaspoon salt and 1/4 teaspoon pepper., Drain potatoes and parsnips; mash with milk, butter and the remaining salt and pepper. Serve with meat mixture.

3/4 pound lean ground beef (90% lean)
1 medium onion, chopped
2 cups finely shredded cabbage
2 medium carrots, halved and sliced
1 teaspoon dried thyme
1 teaspoon Worcestershire sauce
1 tablespoon all-purpose flour
1/4 cup tomato paste
1 can (14-1/2 ounces) reduced-sodium chicken or beef broth
1/2 cup frozen peas
3/4 teaspoon salt, divided
1/2 teaspoon pepper, divided
1/4 cup 2% milk
1 tablespoon butter

These are delicious steaks, good with potatoes, vegetables, and Irish soda bread.

Steps:

  • Heat vegetable oil and butter in a heavy skillet over medium heat until butter has melted. Cook and stir onions in butter and oil until lightly golden brown, about 10 minutes. Push onions aside with a spatula.
  • Rub steaks with cut sides of garlic clove.
  • Place steaks in the skillet, leaving the onions to the side, and cook over medium-high heat until meat is browned but still lightly pink inside, 2 to 4 minutes per side.
  • Remove the skillet from heat. Slowly pour Irish whiskey into the hot skillet (be careful, whiskey fumes are flammable). Mix browned onions into whiskey and bring to a simmer over medium-low heat.
  • Sprinkle steaks with salt, black pepper, and parsley; turn steaks over in whiskey pan sauce to coat both sides, and serve drizzled with sauce.

Steps:

  • 1. In a small mixing bowl, combine the beef broth, apple juice, white vinegar, yellow mustard, Worcestershire sauce, salt, and pepper. Whisk to blend and set aside.
  • 2. In a large iron skillet, brown the ground beef with the diced onion; drain excess grease. Add vegetable oil and diced potatoes to the beef and onions. Cook over medium heat for about 10 minutes or until potatoes are lightly browned, stirring frequently to prevent sticking. Add the liquid mixture, shredded cabbage and bacon, and cook another 5 to 10 minutes over medium heat until most of the liquid is absorbed.
  • 3. Serve immediately while hot with some Irish soda bread.

4 c shredded green cabbage
4 slice cooked bacon, crumbled

  • In a 10-inch skillet with a tight fitting lid, heat the olive oil over medium high heat. When the oil starts to glisten and moire, carefully add the sausages and cook, turning occasionally until browned. Transfer the sausages to a plate. Into the pan, over a medium heat, layer in half of the onion, potatoes and cabbage. Layer the remaining onions, potatoes and cabbage. Sprinkle with carrots and add 1 teaspoon of the thyme. Pour 3/4 cup of broth over the vegetables, sprinkle with salt and pepper and cover tightly. Simmer for 10 minutes.
  • After the vegetables have cooked for 10 minutes, nestle the sausages into the potato mixture, along with any accumulated juices. Add the remaining broth and thyme, cover and cook for an additional 10 minutes, or until potatoes and carrots are very tender. Remove the sausages and cut them into chunks. Return the sausages to the pan and serve.
