  • Preheat oven to 375. In small bowl combine flour, baking powder, baking soda and salt. In large bowl with electric mixer at medium speed, beat butter, sugars and vanilla until creamy. Beat in egg. Gradually blend in flour mixture. Stir in coconut, nuts and chocolate. Drop dough by slightly rounded tablespoonfuls onto ungreased cookie sheet. Bake 10-12 minutes or until edges are lightly browned. Let stand 2 minutes. Remove to wire racks to cook completely.

ISLAND COOKIE BARS

This was a HUGE crowd-pleaser. Jam-packed with peanut-y flavor, they were a unanimous hit with everyone on the Crew. We had success making these with regular pastry flour in place of the whole wheat pastry which can be a little harder to find.

Island Cookie Bars image

Steps:

  • 1. In a medium-sized bowl, whisk together flour, baking soda and salt. Set aside.
  • 2. In a large mixing bowl, cream together sugars, peanut butter, pineapple, buttery spread and vanilla. Beat in the egg. Gradually stir in the flour mixture until completely combined. Fold in 1 C of the white chocolate chips, saving remaining 1/4 C.
  • 3. With dampened hands, press the dough into a greased 9 x 13" baking pan. Sprinkle with remaining white chocolate chips and press them down lightly.
  • 4. Bake bars in a 350 degree oven for 22-25 minutes, until a wooden skewer inserted in the middle comes out clean.
  • 5. Put baking rack on the middle level. Turn oven to broil. Sprinkle coconut on top of the bars. Broil for 30-60 seconds, until coconut begins to brown. Be careful not to burn coconut!
  • 6. Allow pan to cool completely on a wire rack. Cut into 32 bars.

People either love 'em or hate 'em. I'm posting this for the die-hards like me who can't get enough of 'em!

Big Island-Style Stone Cookies image

Steps:

  • Preheat oven to 325 degrees. Line cookie sheet with parchment paper or grease lightly.
  • Cream butter with sugar until light and fluffy. Add eggs and cream; mix well. Add baking soda and vanilla; mix well. Add flour; mix well.
  • Dough may be crumbly. Form by hand into 2-inch balls, place on cookie sheet and flatten.
  • Bake until very firm and brown, about 35 minutes. Check cookies frequently in the last few minutes to be sure they don't burn. As long as they feel at all soft in the middle, they need more baking time. Cool and store in airtight container.
  • The writer of the food article had this note: They're done when they no longer give at all when pressed in the center. If they're the least bit soft, leave them in the oven. I actually took mine out a little too early - I was afraid they were getting too brown - and although they were hard, they weren't rock hard. I consider this a plus, but if you really want that tooth-breaking goodness, push the envelope and bake 'em 'til they're solid.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Sift together the flour, baking powder, baking soda and salt; set aside.
  • In a large bowl, cream together the butter, brown sugar and white sugar. Beat in the egg then stir in the vanilla. Gradually mix in the dry ingredients. Mix in the chocolate chips, coconut and pecans. Roll dough into 1 inch balls and place the cookies 2 inches apart onto ungreased cookie sheets.

~ Coconut Island Cookies ~ Grams image

Steps:

  • 1. Preheat oven to 375 degree F. Spray baking sheet with non stick cooking spray. Set aside. In a small saucepan, combine chocolate with 1/4 cup hot coffee, melt over low heat, stirring constantly.
  • 2. In a medium mixing bowl, cream sugar with the butter.
  • 3. Add egg and chocolate / coffee mixture. Mix well.
  • 4. Sift flour, soda and salt - add to coffee mixture alternately with sour cream , ending with flour.
  • 5. Stir in coconut. Drop by spoonfuls onto prepared baking sheet.
  • 6. Bake for 10 - 12 minutes. Move to cooling racks.
  • 7. Frosting: In a medium saucepan, combine chocolate sour cream and butter, heat until chocolate melts.
  • 8. Remove from heat and stir in sugar, blending until consistency for spreading.
  • 9. Frost warm cookies and sprinkle with coconut. Enjoy these soft, yummy cookies.

3 oz unsweetened, chocolate - i used only 2 ounces
1/4 c hot strong coffee
