ITALIAN ESSENTIALS: EASY/PEASY MOZZARELLA CHICKEN

This is a simple dish that my Aunt Josephine always made six at a time in large glass baking dishes and served it family style with freshly made Italian bread. Ah, the memories. Italian Essentials: Easy/Peasy Mozzarella Chicken image

Steps:

  • 1. PREP/PREPARE
  • 2. You will need a small ovenproof dish to make this recipe.
  • 3. Here is the marinara I used but use whatever you have on hand. https://www.justapinch.com/recipes/sauce-spread/other-sauce-spread/italian-essentials-awesome-marinara-sauce.html?r=2
  • 4. Gather your ingredients (mise en place).
  • 5. Place rack in the middle position, and preheat the oven to 360f (185c).
  • 6. Add the marinara sauce to the bottom of the baking dish.
  • 7. Place the chicken breast on top of the sauce.
  • 8. Sprinkle with the dry spices, and salt
  • 9. Add the chopped olives.
  • 10. Add the bell peppers, if using
  • 11. Cover with the prosciutto, if using.
  • 12. Cover with the cheese.
  • 13. Place into the preheated oven until the chicken is cooked through, and the cheese is bubbly, and beginning to brown, about 25 - 27 minutes.
  • 14. PLATE/PRESENT
  • 15. Top with some freshly shredded parmesan cheese, and serve while nice and hot with some crusty bread, and other sides. Enjoy.
  • 16. Keep the faith, and keep cooking.

PLAN/PURCHASE
1/4 c marinara sauce, homemade, or store bought
1 large chicken breast, skinless, boneless
1/8 tsp dried basil
1/8 tsp dried parsley
1/8 tsp dried oregano
1/8 tsp salt, kosher variety, fine grind
5 - 6 pitted green olives, sliced
1/4 c mozzarella cheese, sliced or shredded
OPTIONAL ITEMS
1/4 medium red or green bell pepper, diced
2 slice prosciutto
freshly shredded parmesan cheese, for garnish

CRISPY ITALIAN CHICKEN TOPPED WITH MOZZARELLA

Crispy fried chicken tenderloins topped with a tomato-garlic-basil sauce and fresh mozzarella -- you can't beat fresh ingredients! Great with rice pilaf and a good green salad.

Crispy Italian Chicken Topped with Mozzarella image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk together the flour, 1 1/2 teaspoons of salt, 1 teaspoon of black pepper, and cayenne pepper in a bowl. In a separate shallow bowl, beat the egg. Place the panko crumbs into a third bowl.
  • Heat 2 tablespoons of olive oil in a skillet over medium heat. Dip each chicken tender into the seasoned flour, then into the egg; roll in panko crumbs. Pan fry the chicken tenders until golden brown on both sides, about 4 minutes per side. Transfer the chicken pieces to a baking sheet.
  • Heat 2 more tablespoons of olive oil in a skillet over medium heat, and stir in the tomatoes, garlic, basil, onion, and a pinch of salt and black pepper. Reduce heat and simmer the tomato sauce until it starts to thicken, stirring often, about 10 minutes. Spoon about 1 tablespoon of sauce over each chicken piece; top with a half piece of mozzarella cheese.
  • Bake in the preheated oven until the cheese is melted and bubbly, 8 to 10 minutes.

  • In a large resealable plastic bag, combine the baking mix, Parmesan cheese, Italian seasoning, paprika and pepper. Add chicken, a few pieces at a time, and shake to coat. , Place in a greased shallow baking dish. Bake, uncovered, at 400° for 10 minutes on each side. Pour sauce over chicken. Reduce heat to 350°; bake for 15-20 minutes or a thermometer reads 170°. Sprinkle with mozzarella cheese.

  • Fry the onion and garlic in the oil until softened. Add the oregano, tomatoes and sugar, a little splash of vinegar and some salt and pepper, then simmer for 20 mins until the sauce is really thick. Stir in the chicken and transfer to a baking dish.

  • Mix the garlic powder, salt, and pepper together and season each side of each chicken breast with it evenly.
  • Heat oil in a large skillet over medium high heat. When oil is hot, place chicken breast in a single layer in the skillet. Cook chicken in batches if the skillet is too crowded.
  • Cook chicken 3-4 minutes on each side allowing it to brown before flipping. Then remove chicken from skillet and set aside.

  • CHICKEN: Sprinkle the chicken with a pinch of salt and pepper on both sides. Heat a large nonstick skillet over medium-high heat with the olive oil. Add the chicken to the skillet and cook for about 3-5 minutes per side or until the chicken is completely cooked through, remove to a plate. If you are planning on serving this with pasta, get the water going and cook the pasta according to package directions.
  • TOMATO SAUCE: Preheat the oven on the broiler setting. Add the onions to the oil remaining in the pan. If there isn't any, add in about ½ teaspoon and sauté the onion for 2-3 minutes until they soften, add the garlic and let cook for 30 seconds. Add the crushed tomatoes, Italian seasoning, red pepper flakes, dried basil, and pesto and stir to combine. When the sauce reaches a simmer, add a ¼ cup of water, lower the heat, cover and allow to simmer for 10-12 minutes or until the sauce thickens a bit. Season with salt and pepper to taste.
  • ASSEMBLE: Nestle the chicken breasts into the sauce and using a spoon, cover the chicken with sauce. Top each breast with a slice of cheese. Place under the broiler for 1-2 minutes or until the cheese gets nice and bubbly and just melts. Top with chopped parsley or basil ribbons. Serve with pasta or crusty bread and a salad.
