- On bottom half of sandwich buns, layer sausage, ham, pizza sauce, cheese, onion, banana peppers, pepperoni and salami. Replace tops. Wrap each sandwich in heavy-duty foil; place on baking sheets. Bake at 425° for 12-15 minutes or until cheese is melted.

- On four slices of bread, layer one slice of mozzarella, two slices of tomato, 1 teaspoon Parmesan cheese, a dash of garlic salt and six slices pepperoni. Top with remaining mozzarella and bread. Spread outside of sandwiches with butter., On a hot griddle, toast sandwiches until golden brown, 3-4 minutes on each side. Serve with pizza sauce.

ITALIAN WEDGIE SANDWICHES
My inspiration for this recipe came from two places...(1) My love for a traditional Italian Hoagie and (2) a little pizza shop I remember from my Hometown in PA that made "Wedgie" sandwiches out of Pizza crust instead of regular bread. I hope you enjoy this as much as I do!

Steps:
- Make the Bread:.
- Separate the Pizza Doug in half. Roll out as if you were making a regular pizza crust. Drizzle each round with Olive oil, salt, black Pepper, garlic, and Parm cheese. Bake according to manufacturers directions.
- Make the Dressing:.
- Whisk together all ingredients until well incorporated.
- Make the Sandwich:.
- Take one of the pizza crusts, seasoned side down, and drizzle 1/2 of the dressing on the bread. Layer the meat, cheese, and vegetables. Pour remaining dressing on top. Top the giant sandwich with the second pizza crust. Press.
- Cut the Giant Pizza shaped sandwich into 8 wedges. Bake the wedges in oven or toaster oven at 350 for a few minutes to allow cheese to melt.
- Serve and be happy!

SCHIACCIATA SANDWICHES
In Italy, pizza dough can be found at almost every grocery store. If you have a favorite bakery where you go to buy your bread, they might also give you some, if you know them. The recipe that I have is one I have been using since I started making pizzas with my father. One of his dear friends who was a famous pizza maker in Florence passed the recipe on to us, and now I share it with you. It's simple and works great, but don't forget to check your local stores because you don't really need to go the extra length to make your own dough. If you want to make your own dough, you can always freeze it for later. The idea of these sandwiches is to keep the filling simple, to one or two ingredients, and to make them count getting the very best you can find.

- For the bread: Preheat the oven, pizza oven or grill to 550 degrees F. Add 1/2 cup of the bread flour, the lukewarm water and the yeast to a stand mixer fitted with the paddle attachment. Mix well and let sit until bubbly, about 30 minutes.
- Whisk together the remaining 3 1/2 cups bread flour and the salt in another bowl so it will be evenly distributed.
- Once the yeast mixture is nice and bubbly and looks like foamy beer, add 3/4 cup cold water and the olive oil. Fit the mixer with a dough hook and begin mixing, adding the flour mixture in increments. Mix the dough until the dough starts creeping up the dough hook and comes away from the sides of the bowl, about 5 minutes.
- Place the dough in a large bowl lightly greased with olive oil. Turn to coat all sides of the dough with oil. Cover the bowl loosely with a clean tea towel. Let rise until doubled in size, about 2 hours. Punch the dough down, and let rise for another hour.
- Divide the dough into 4 equal disks. Lightly flour a work surface with semolina flour. Stretch each disk out to a 10-inch round using your fingers or heels of your hands (and a rolling pin, if you prefer).
- Flatten the disks of dough into rounds about 1/2-inch thick and press with fingers to make holes. Drizzle with extra virgin olive oil and sprinkle with sea salt.
- If using a pizza oven, bake until the bread has browned and is starting to char slightly on the edge, about 10 minutes.
- If using a grill, lay the dough oiled-side up and grill until char marks appear on the bottom. Flip and cook for another 2 minutes on the second side.
- If using a regular oven, turn a baking sheet upside-down on the center rack of the oven. Slide the schiacciata onto the baking sheet. Bake until browned on the edges, 10 to 15 minutes. (Ovens vary, so times will be different. Use the visual clues to help you know when it's done.)
- Set the breads aside to cool.
- For assembly: Slice the schiacciata in half horizontally to make sandwich halves. Cut into quarters and fill with assorted fillings as desired. Serve immediately.

- Tear off a 3 6x18-inch piece of heavy foil.
- Fold in half to make a double thickness of foil that measures 18x18 inches.
- Place sweet pepper and onion in the center of the foil.
- Dot with margarine or butter.
- Bring up two opposite edges of foil and seal with double fold.
- Then fold remaining ends to completely enclose, leaving space for steam to build.
- Prick the sausage links in several places with a fork or the tip of a sharp knife.
- Place sausage links and the foil packet on grill.
- Cover and grill for 20 to 25 minutes (medium heat) or until sausage juices run clear and vegetables are tender.
- Meanwhile, heat pizza sauce in a small saucepan.
- Toast cut sides of buns on grill.
- To serve, halve sausage links lengthwise, cutting to but not through the other side.
- Place sausage links in the toasted rolls.
- Top each with pepper mixture and pizza sauce.
- Sprinkle with Parmesan cheese.

- Make the dough: Pour warm water into a large bowl; sprinkle with yeast, and let stand untilfoamy, about 5 minutes. Whisk oil, sugar, and 2 teaspoons salt into yeast mixture. Add flour,and stir until a sticky dough forms. Turn out dough onto a floured surface, and knead until smooth, about 8 minutes. Transfer to an oiled bowl, and turn to coat. Let stand, covered, in a warm place until doubled in volume, about 1 hour.
- Meanwhile, make the filling: Preheat oven to 400 degrees. Spread tomatoes on a rimmed baking sheet, drizzle with 3 tablespoons oil, and season with salt. Roast, flipping after 30 minutes, until shrunken and slightly dehydrated, 45 minutes to 1 hour. Let cool. Raise oven temperature to 500 degrees (with convection on if possible).
- Turn out dough onto a lightly floured surface, and divide into 8 pieces. Form each into a ball.Let rest, draped with plastic wrap, for 15 minutes.
- Place 1 dough ball on a lightly oiled baking sheet, and shape into a 7 1/2-inch round. Arrange a layer of tomatoes on half of the dough, and dot with 2 tablespoons goat cheese. Top with 4 slices soppressata. Tear off pieces of mozzarella, and place over top. Fold dough over to enclose filling, but do not seal. Repeat with remaining dough, tomatoes, goat cheese, soppressata, and mozzarella (arranging 4 sandwiches per baking sheet). Bake until golden and cooked through, about 10 minutes. Remove from oven. Let cool for at least 15 minutes before serving.
- Meanwhile, toss arugula and basil with lemon juice and remaining 1/4 cup plus 2 tablespoonsoil. Season with salt and pepper.
- Open each sandwich, and fill with arugula-basil mixture. Cut each in half.
