Steps:

  • 1. Cream butter until fluffy. Add sugars and beat until thoroughly combined. Beat in vanilla and eggs, adding eggs one at a time, and beating well after each.
  • 2. In a large bowl, sift together flour, baking soda and salt. Add flour mixture, all at once, to creamed mixture. Mix on low speed, then increase to high, to thoroughly mix all ingredients. Add oatmeal and mix until thoroughly combined.
  • 3. Add your choice of "extra items". You may use a choice of 3 items or all of them. Whatever you want to add, add it. If you want something else...you can add it, or if you don't like something on this list...omit it...it's that simple!
  • 4. Form dough into balls (I like to use an ice cream scoop), using 1/4 cup (60 ml) for each cookie. Place six balls of dough on each baking sheet. With lightly moistened hands, gently flatten each ball of dough. Bake the cookies for about 14 - 16 minutes or until they are golden brown around the edges and just barely set in the center. They should still be soft. Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool. They can be stored in an airtight container for several days or they can be frozen. Makes about 20 large cookies.

BASIC RECIPE:
1 c butter or margarine, softened to room temperature
2/3 c brown sugar, firmly packed (light or dark)
1/2 c granulated sugar
1 1/2 tsp pure vanilla extract (do not use imitation with this recipe)
2 large eggs, at room temperature
2 c all-purpose flour
1 1/4 tsp baking soda
1/2 tsp salt
2 c old-fashioned rolled oats
"EXTRA SPECIALITES"
1/2 c chocolate chips (semi-sweet, bittersweet, milk chocolate, white chocolate)
1/2 c butterscotch or toffee chips
1/2 c dried raisins (light or dark), dried cranberries or dried cherries
1/2 c nuts (pecans, almonds, walnuts, cashews, macadamia, etc.)
1/2 c coconut

EVERYTHING COOKIES!

This one has a bit of everything I like in a cookie-chocolate, oats, nuts and coconut. A friend of mine gave me a recipe for them, but I made some changes. I find that when you cut sugar, you can actually taste the other ingredients better. I also increased the coconut and oats.

EVERYTHING COOKIES AKA MONSTER COOKIES

This cookie has a little bit of everything, except flour. It was a favorite of mine growing up and is still a hit at parties. The recipe in its original form makes a ton of cookies, so you may want to cut in half...

Steps:

  • In very large bowl, use mixer to combine first seven ingredients--eggs through peanut butter.
  • Add oatmeal, candy, and chocolate chips and mix thoroughly by hand.
  • If dough is too sticky, either refrigerate or add another 1/2 to 1 cup oatmeal.
  • Scoop ice cream size balls of dough onto cookie sheets, with plenty of space in between.
  • Bake at 350° for 13-15 minutes. If using two racks, switch top to bottom and bottom to top about halfway through.

6 large eggs
2 1/4 cups brown sugar
2 cups white sugar
1 1/2 teaspoons vanilla
4 teaspoons baking soda
1 cup butter, softened
3 cups crunchy peanut butter
9 cups oatmeal
1 1/2 cups plain M&M's
1 1/2 cups chocolate chips

EVERYTHING COOKIES!

I took the basic oatmeal cookie recipe (right off the Quaker box) and added everything I could find in the pantry: chocolate chips, raisins, even some peanut butter. Was out of vanilla, so added almond extract. Wonderful chewy crunch!

Steps:

  • Preheat oven to 350°F with a rack in center. Beat butter with both sugars, baking powder, baking soda, and salt on medium-high speed until light and creamy, about 2 minutes. Add eggs, one at a time, beating to combine after each addition.
  • Beat in vanilla. Add flour and beat on low to combine. Beat in cereal, chocolate, pretzels, and toffee bits to combine, a few seconds.
  • Scoop 1/4-cup balls of dough onto parchment-lined baking sheets, spaced 2 inches apart. Flatten each slightly. Press pieces of chocolate and pretzel and a few cereal flakes on top of each cookie.
  • Bake 8 minutes, then remove from oven and bang sheets on counter or stove top. Return to oven and bake until cookies are barely set in centers and starting to brown on edges, 8 to 9 minutes more. Let cool on sheets 5 minutes, then transfer to wire racks and let cool completely. Store in an airtight container at room temperature up to 3 days, or freeze up to 1 month.
