JACK'S JELL-O AND FRUIT SALAD
Jack could eat fruit all day long, especially berries. He is enamored with different colors and shapes, so to set them off, we love to make him these sweet, jiggly salads. We serve them at playdates with his friends Lex, Brady, and Colin (they're triplets, y'all) and make a game of digging up the fruit in the Jell-O (yup, with their hands-it's messy!).
Yield serves 6 to 8 kids

Steps:
- In a large bowl, combine the Jell-O with 2 cups of boiling water. Stir until the powder dissolves completely, about 2 minutes. Stir in 2 cups of cold water. Pour the mixture into a 3-quart Jell-O mold and refrigerate for 30 minutes.
- Stir in the strawberries, blueberries, grapes, and bananas. Return the mold to the refrigerator and continue to chill until very firm, about 3 hours. Unmold and serve cold in bowls.
GRANDMA'S GELATIN FRUIT SALAD
Whenever I invite my big family for dinner, my grandchildren request this favorite fruit salad. My sons have always liked it, too - maybe the taste runs in our family! This salad is also good for potluck gatherings.

EASY STRAWBERRY JELLO SALAD WITH COOL WHIP
Steps:
- Boil one cup water on stove top, and mix into bowl with jello powder in mixing bowl. Add in one cup cold water and stir. Chill jello, preferably in a shallow pan, for about 45 minutes or until it is completely cool, just starting to set. Pour the jello into a large mixing bowl. Mix the jello up vigorously, for about one minute. Using an electric mixer is great for this step. But watch out it splashes. This breaks up any jello bits that have started to set, and adds air to the mix. Then fold in the Cool Whip and then strawberries. Mix completely, but be gentle and don't deflate the mix by stirring too aggressively. If you want to add in mini marshmallows, do it now. Add them in about 1/2 cup at a time to make sure you don't overdo it. Transfer to a 9×13 pan for serving, or into individual dishes if you prefer. You can top with whipped cream and sliced strawberries if you prefer. If you want to dress up this dish, spread a spoonful of strawberry jam in the bottom of a glass dessert dish or shallow glass. Then add the salad mix. After the dish has chilled, dollop with some fresh whipped cream and a slice of strawberry.

- Add the Jello crystals to a large bowl. Stir in boiling water until crystals are completely dissolved. Add in sugar and stir until completely dissolved. Add in cold water and orange juice and stir.
- Add the cranberries, apples, mandarin oranges, pineapple and walnuts. Stir until mixed. Fruit will float to the top likely but that is fine.
- Pour the Jello and fruit mixture into the 9" X 13" glass dish. Cover tightly with plastic wrap and let set in the fridge for a minimum of 6 hours or overnight. Check that Jello is set and then serve in the same dish or a pretty bowl. Top with more fruit, nuts, marshmallows, sugared cranberries or whipped cream.
