- Wash peppers. Cut a slit along one side of each pepper. Remove seeds; rinse and dry peppers. , In a skillet, cook sausage over medium heat until no longer pink; drain. Stuff peppers with sausage and wrap with bacon; secure with soaked toothpicks., Grill peppers, uncovered, turning frequently, over medium heat until tender and bacon is crisp, about 15 minutes.

JALAPENO GARLIC BEEF
This is my creation. I wanted a good spicy beef dish, and decided to create this since I couldn't find a quality one at any Chinese restaurant in my area, unless I wanted to pay an arm and a leg. Hope you enjoy, and feel free to adjust the heat to your liking.

Steps:
- Before starting, marinate beef in desired amount of soy sauce for at least an hour.
- In a large, heated wok or skillet, begin browning beef in a little bit of oil.
- As the beef gets more brown, begin adding the jalapenos, garlic, and green onion, stirring constantly.
- After the jalapenos begin softening somewhat, add the squash, zucchini, and mushrooms, stirring constantly.
- After vegetables are cooked through (still somewhat crispy, do not over-cook) add beef broth and more soy sauce to taste, let simmer for 10 minutes.
- Toss with cooked rice or noodles.

SPICY GARLICKY BEEF MARINADE
This wonderful marinade uses spicy jalapenos, olive oil, elephant garlic, and fresh cilantro! This is good for carne asada and makes enough marinade for approximately 2 lbs of meat.

- In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., In a small bowl, combine the jalapenos and garlic; set aside. When cycle is completed, turn dough onto a lightly floured surface. Divide dough in half. , For each loaf, roll one portion of dough into a 14x9-in. rectangle. Spread with 1-1/2 teaspoons butter. Sprinkle with 1/2 teaspoon garlic salt, 1 tablespoon cheese and 1/3 cup jalapeno mixture. Roll up jelly-roll style, starting with a short side; pinch seam to seal. PICKLED GARLIC AND JALAPENO PEPPERS
A quick and easy recipe for delicious pickled peppers! My husband loves these, and the amount of garlic can be adjusted depending on personal taste. We use a lot because we're big fans of pickled garlic too. You could also substitute serrano peppers for the jalapenos, cauliflower for the carrots, or add small onions. Pickles will keep approximately 6 weeks in the fridge.
