Jamaican Jerk Pork Loin image

Steps:

  • Preheat oven to 350 degrees F.
  • Mix jerk seasoning with the oil in a small bowl (this will thin it and cut the heat). Trim any excess fat from the pork loin, leaving a thin-layered wide strip down the center of the top. Evenly rub the entire pork loin with the jerk seasoning mixture. Place pork loin in a shallow greased roasting pan, and bake for 20 minutes. Then reduce the temperature to 300 degrees F and continue baking for about 1 more hour, or until a meat thermometer stuck in the thickest part reads 145 degrees F. Remove from oven and let rest for at least 10 minutes before slicing.

Steps:

  • Preheat oven to 350 Sprinkle pork all over with 5tsp jerk seasoning and salt, coating all over. Let stand. Heat 1 T oil in heavy large skillet and cook pork until just browned on all sides (about 5 min) Transfer pork to rimmed baking sheet. Roast pork until thermometer registers 145 degrees (20 min. LESS) Remove; let stand 5 min. While pork roasts in oven cook rice and beans in same skillet used to brown the pork. Heat remaining 1 T oil in skillet over med-hi heat. Add rice, turmeric and one tsp of the seasoning and stir 1 min Add broth and generous 1/4t salt and bring to simmer. Reduce heat to low,cover and simmer without stirring until rice is tender and water absorbed..about 15 min Stir in beans and cilantro. Mound rice and slices of pork tenderloin on plate and serve.

Jerk pork & pineapple skewers with black beans & rice image

Steps:

  • Mix together the pork, jerk seasoning, allspice, chilli sauce, if using, lime zest and juice, and some seasoning. Thread the pork and pineapple onto metal skewers (or pre-soaked wooden skewers) and brush with the oil.
  • Cook rice following pack instructions. Drain well, then put back in the saucepan with the beans, stir and keep warm.
  • Meanwhile, heat a griddle pan until very hot. Cook the skewers for 3 mins on each side until nicely charred and the pork is cooked through. Serve skewers with the beans and rice, extra chilli sauce, if you like, and lime wedges for squeezing over.

Steps:

  • In a large bowl combine the first 7 ingredients.
  • Mix thoroughly.
  • In a food processor combine green onions and garlic, peppers, onion, lemon juice, oil, soy sauce, malt vinegar and ginger.
  • Blend until very smooth.
  • Place pork in a glass bowl or large freezer bag, combine all ingredients and coat pork well.
  • Cover and stir or flip often.
  • Marinate for at least 8 hours.
  • Take out of the fridge 1 hour before grilling.
  • Preheat grill to medium high, skewer pork, 4 cubes to a skewer.
  • Cook for 6-8 minutes on one side, flip and 6-8 minutes on the other.

Steps:

  • Half fill the kettle and put on to boil.Warm the oil in a large nonstick frying pan over a low heat while you tip the jerk sauce into a shallow dish and use to coat the pork steaks on both sides. Place them in the hot oil (reserve the sauce left in the bowl) and turn up the heat. Fry for 4 minutes on each side until cooked and richly glazed.
  • While the pork is frying, pour 150ml/1⁄4 pint of boiling water into a medium pan over a high heat and crumble in the stock cube and creamed coconut. Trim and slice the spring onions, holding them together as a bunch so you can chop them all in one go. Add to the pan, give a quick stir, then tip in the rice and beans. Stir and heat gently, breaking down any clumps of rice with a spoon. If the rice looks a little dry, add an extra splash of water.
  • Tip the remaining sauce into the pan to heat through with the pork. Pile the rice onto plates, top with the pork and spoon the pan juices over.

Chef John's Grilled Jerk Pork Tenderloin image

Steps:

  • Cut the tenderloin in half and set the thinner end to the side. Cut the thicker end in half lengthwise. You should have 3 mostly equal pieces.
  • Combine onion, thyme, vinegar, garlic, habanero peppers, ginger, soy sauce, vegetable oil, brown sugar, allspice, black pepper, cayenne pepper, nutmeg, and cinnamon in a blender. Puree until smooth, stopping to scrape down sides.
  • Pour Jerk marinade into a resealable plastic bag. Add pork tenderloin pieces, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 4 to 6 hours.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Grill pork, moving if necessary to avoid overcooking the thin parts of the meat, until dark grill marks appear and they lift easily from the grill, 6 to 7 minutes each side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
