CHICKEN LIVER AND BACON SKEWERS
I enjoy doing a family brunch every now and then, especially on Easter and this is a requested item repeatedly. Even the kids like them, until they find out they have liver in them. :)

Steps:
- 1. Heat 1" vegetable oil in large skillet to a medium/medium high heat. Mix flour and essence together in a pie plate. Skewer bacon and liver pieces alternately, entwining the bacon with the liver (So if you're looking at the side of the skewer, the bacon is in an "S" shape with liver in the curves. I hope this makes sense) Then dredge the skewer in flour mixture...Place skewer in hot oil 3-4 minutes on each side, let drain on paper towel, sprinkle with salt and serve.
- 2. Essence ... this is Emeril Lagasse's "Emeril's Essence" recipe, a seasoning you can use for so many things...really good on a pork tenderloin! 2 Tablespoons Garlic Powder 1 Tablespoon Onion Powder 2 Tablespoons salt 2 Tablespoons paprika 1 Tablespoon pepper 1 Tablespoon oregano 1 Tablespoon thyme Mix together and store in air tight container/ shaker bottle.
CHICKEN LIVER AND BACON APPETIZER

Steps:
- Cut livers in two, season with salt and pepper.
- Melt butter in saute pan and add livers; cook for one minute.
- Wrap each piece of liver in a strip of bacon and fasten with a toothpick.
- About ten minutes before serving, place bacon wrapped livers in a baking pan and broil until bacon is crisp.
- Drain on paper towels.
- Serve hot, either with toothpicks or on a small square of toast.

- Preheat oven to broil setting.
- Cut each slice of bacon in half and wrap around each chicken liver, securing with toothpicks.
- Broil until bacon is cooked and crisp on one side, then turn and repeat (about 6 to 8 minutes each side). Serve with honey in a bowl, for dipping.

JANICE'S BACON CHICKEN LIVER APPETIZER
I was at my friend Janice's home over twenty years ago when she brought these out. They were a hit then (everyone wanted the recipe) and have produced the same reaction every time I've made them. Try these and I know you will make them again and again for so many different reasons. When baking you may want to use a broiler pan so the bacon grease can drain off. I've baked them of cookie sheets and they are great, just a little more bacon flavor. Simply drain them before rolling in cheese. These are good cold or warmed over. ENJOY soak toothpicks in water

- clean chicken livers and cut into good size bites (usually in half).
- cover chicken livers with bread crumbs.
- cut bacon strips into sizes that will wrap around liver once with overlap enough to secure to liver with a toothpick.
- place on baking sheet or broiler pan and bake at 350 until bacon is crisp or to your liking (45 - 60 min).
- When bacon is to your liking, remove from oven and, while still hot, roll in or sprinkle with parmesan cheese.

- Preheat oven to Broil/Grill.
- Sprinkle each 1/2 chicken liver with garlic salt to taste. Wrap 1/2 slice bacon around each chicken piece and fasten with a toothpick. Place on a broiling pan.
- Broil for 5 to 7 minutes. Turn pieces over and broil another 5 to 7 minutes, or until chicken livers are cooked through and no longer pink inside. Serve hot.

- While the grill preheats, place the bacon in a large skillet over medium-high heat.

- 1. Mix flour, garlic salt, black pepper. Dredge the chicken livers in the flour until well coated.
- 2. Heat 1 inch of oil in a skillet. Fry the coated chicken livers for 4 minutes per side. Remove to a plate with paper towel on it to drain.
- 3. In another skillet use tablespoon of leftover bacon grease to fry the onions in at the same time the livers are cooking. Top the finished livers with the bacon strips and onion slices.
