MAMA'S TEXAS-STYLE PEACH COBBLER
This is very traditional southern comfort food always cooked in a big bowl. My grandmother passed down her 'cobbler bowl' to me that she got from her grandmother.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Mix self-rising flour and sugar in a bowl. Stir milk into the flour mixture.
- Pour melted butter in an oven-safe bowl. Pour flour mixture over melted butter. Layer peaches in heavy syrup atop flour mixture. Do not stir!
- Bake in preheated oven until peaches are bubbly and crust is lightly browned, 50 to 60 minutes.

MAMA'S BLACKBERRY COBBLER
Alabama has some tasty fresh blackberries. Decades ago, my mama was heading out to pick blackberries to make a cobbler, but she ended up going to the hospital to have me instead. - Preheat oven to 350°. Pour 1/2 cup melted butter into an 8-in. square baking dish. In a small bowl, combine flour, 1 cup sugar, milk and vanilla until blended; pour into prepared dish. In another bowl, combine blackberries, remaining 1/2 cup sugar and remaining 2 tablespoons melted butter; toss until combined. Spoon over batter., Bake until topping is golden brown and fruit is tender, 45-50 minutes. Serve warm.

JAY'S MAMA'S COBBLER
Though my mom calls it 'homemade peach cobbler'; I understand that its use of store-bough crust might call that name into question. Note: If you use frozen peaches, make sure to thaw first. Voilà! :-)

- Melt butter in a shallow 2-quart baking dish. Mix together flour, sugar, and milk to make a batter; pour over the hot melted butter. Do not stir. Arrange peaches evenly over sauce on bottom of a 10x6x2-inch baking pan.Sprinkle with cinnamon, nutmeg and salt. Make sure the sauce does not cover peaches.
- Crust: Take crust out of refrigerator and bring to room temperature. Roll out and cut into strips for basket weave. Top peaches with basket weave crust.
- Topping: Mix ingredients and sprinkle atop crust.
- Bake cobbler until bubbly and slightly browned (at 375 to 400° for about 40 to 50 minutes). Serve warm with vanilla ice cream or whipped cream.

MAMA'S SOUTHERN BLACKBERRY (OR ANY FRUIT) COBBLER
As southern as they come! Just smelling it makes a person talk with a southern drawl! This is my mama's own old fashioned cobbler recipe. My dad and my husband call it "This Ain't No Lazy Woman's Cobbler" (referring to those easy dump in kind), but you won't find one that tastes better! Honestly, it's not difficult even though...

- 1. Mix flour and salt. Using pastry cutter, cut shortening into flour. Once it becomes a meal texture, add the milk and stir together.
- 2. Mix fruit, 1 1/2 cups sugar, and 1 1/2 cups water in saucepan and bring to boil. Turn down to simmer while you roll some dough into dumplings.
- 3. Begin with about 1/4 of the dough. On floured surface, roll dough to about 1/4 inch thickness (or less). Cut into 1-inch pieces and drop into berry mixture. Allow to cook a minute before stirring down and adding more dumplings. You may need just a bit more of the original dough for dumplings. Once it has a good mixture of dumplings and juice, remove from heat. You want this to still be a little juicy. Please remember that your bottom crust will absorb some of the juice.
- 4. Split the remaining dough into near halves. If one side has slightly more, save it for last. Roll out first half. Spray Pam into bottom of glass 13 X 9 pan. Place rolled out crust into bottom of pan. (Don't cover sides.) If crust tears, it's okay, you can piece it together for the bottom of the dish.
- 5. Pour berry mixture on top of bottom crust.
- 6. I usually roll out all of my dough on wax paper, but for this step, I always do. Roll out the remaining dough into a rectangular shape larger than the 13 X 9 dish on floured wax paper. When it's large enough, use the wax paper to turn the top crust onto the cobbler. If an area tears, you can tear off some of the extra to cover the tear. If some areas go beyond the dish, work them into the dish. The top crust is yummy, flaky goodness, and extra is always a good thing.
- 7. Cut up the butter and spread out pieces all over the top crust. Sprinkle with sugar and cinnamon or nutmeg.
- 8. Bake at 350 degree oven for 30-35 minutes or until nicely browned. This is delicious served with real whipped cream or vanilla ice cream or just by itself.
NOT YOUR MAMA'S APPLE COBBLER
I cant remember where I found this recipe, but it is super yummy. Its fairly easy to make, and seems to me that if you had unexpected company, this would be a way to WOW them. :)

- Heat oven to 400 degrees. Coat a 2-quart baking dish with nonstick cooking spray.
- Heat apple juice in a medium-size sauce pan. Add raisins and cook 1 minute. Add apple pie filling and bring to a simmer. Stir in walnuts. Spoon filling into prepared baking dish.
- Unroll puff pastry on a lightly floured surface. Cut out 12 circles with a 2-inch cutter. Place circles over top of apple mixture and brush with egg-water wash. Sprinkle with sugar.
- Bake at 400 degrees for 20 minutes, until pastry is browned. Remove from oven:cool slightly.

- Preheat oven to 350 degrees F (175 degrees C).
- Stir apples, 2/3 cup sugar, cinnamon, cloves, and nutmeg together; distribute apple mixture into a 9x9-inch baking dish that is at least 2 inches deep.

MAMA'S FRUIT COBBLER
Fast and easy. Very unusual topping made with bread- but you can't tell! Use whatever fruit you would like. My family says this is THE best cobbler EVER! I like it bc it is made with things that I always have on hand and can be thrown together in minutes yet it looks pretty enough to serve company.

- Mix first 4 ingredients together and set aside.
- Place drained fruit in a buttered 8x8 pan and top with bread strips.
- Pour sugar mixture over bread and fruit and sprinkle with cinnamon if desired.
- Bake at 350 degrees for 35-45 minutes or until golden brown.
- Great topped with ice cream or whipped cream on top.
- Note: I dont usually measure the fruit, I just fill the bottom of the pan. Frozen fruit that has been partially defrosted works great as does soft fresh fruit- harder fruits such as apples or pears should be precooked until softened for best results. Drained canned fruit works great for this too. One large can (29 oz) is a perfect amount.

- Preheat oven to 375 degrees F (190 degrees C). Spray a 9x9-inch baking pan with cooking spray.

- In a large bowl, gently fold the berries, sugar, cornstarch, lemon juice, and vanilla extract together until thoroughly combined. Spread filling evenly into prepared pan.
- Whisk the flour, sugar, baking powder, and salt together in a large bowl. Using a pastry cutter or two forks, cut the butter into the mixture until it resembles coarse meal (pea-sized crumbs). A pastry cutter makes this step very easy and quick! You could also use a food processor, too. While slowly stirring, slowly drizzle in 1/2 cup buttermilk. Mix until evenly combined. Take handfuls of dough and gently flatten out. Place dough all over the top of the berry filling. There’s no special trick to this– just flatten the dough in sections and cover most of the berries.
- Brush the top of the biscuit dough with 1 Tablespoon of buttermilk, then sprinkle with coarse sugar. These two are optional, but both help achieve a shiny, crunchy, golden brown crust.
