HEARTY TUNA CASSEROLE
Here's a jazzed-up version of Mom's tuna casserole that's sure to be comfort food for the whole family! Jan Heshelman of Bloomfield, Indiana adds pizzazz to the traditional dish with mustard, sour cream, thyme and zucchini. "I found this recipe in a magazine," says Jan. "It is one of the few dishes with zucchini that my husband will eat."

Steps:
- Cook noodles according to package directions; drain. In a large bowl, combine the noodles, tuna, zucchini, sour cream, celery, onion, mayonnaise, mustard, thyme and salt. , Spoon half into a 2-qt. baking dish coated with cooking spray. Sprinkle with half of the cheese. Repeat layers. Top with tomato. , Cover and bake at 350° for 30-35 minutes. Uncover; bake 5 minutes longer.

GROWN-UP TUNA (NOW CRAB) CASSEROLE
For you empty-nesters, who love old fashioned tuna casserole. It's your turn!!! (Note: Zaar software will not recognize the word "pouches", so I used pkgs. of crab in the ingredients.) Adapted from Country Living magazine.

Steps:
- Pick the crab meat, removing any shell or cartilage. Set aside. Cook and drain noodles. Set aside. Preheat oven to 350°. Lightly coat four 1-cup-capacity baking dishes or one 9" round baking dish with 1 tablespoon butter and set aside.
- Melt remaining butter in a medium skillet over medium heat.
- Add shallots and cook until soft.
- Add tomato paste and garlic and cook, stirring continuously, for 5 minutes.
- Move pan away from the heat and add brandy or chicken broth.
- Return to heat and bring mixture to a boil, whisking continuously.
- Reduce heat to medium low, add 1 cup water, and simmer until thickened slightly - about 10-12 minutes.
- Strain mixture and stir in cream, remaining salt, and pepper.
- Add egg noodles, crab meat, and lemon juice and toss to coat.
- Divide mixture evenly among the prepared baking dishes, cover with foil, and bake until cooked through and the noodles are hot - about 20 minutes.
- Garnish with thyme sprigs and serve immediately.

QUICK AND EASY TUNA CASSEROLE
Steps:
- Bring a large pot of water to a boil. Add noodles and frozen peas. Cook until noodles are al dente, drain well. Return noodles and peas to the pot.
- Mix soup, tuna fish, onions, processed cheese and pepper into the pot. Stir constantly until all of the ingredients are well mixed and the cheese has melted. Serve.

- Cook egg noodles al dente in a large pot of generously-salted water in a large stockpot according to package instructions. Drain and set aside.
- Meanwhile, as the water for the noodles is cooking, melt butter (or olive oil) in a large saute pan over medium-high heat. Add onion and carrots, and saute for 5-7 minutes, or until both are soft. Add garlic and saute for 1 more minute until fragrant. Stir in the flour and cook for 1 more minute. Whisk in the chicken stock until it is combined, then stir in the milk, Italian seasoning, salt, pepper, mushrooms, peas and tuna. Continue cooking, stirring occasionally, until the mixture reaches a simmer and thickens and the mushrooms are cooked, about 4-6 more minutes.
- Once the noodles are ready, add the sauce mixture to the (drained) noodles, and toss to combine. Stir in the cheddar cheese until it is evenly combined. Then you can either serve the pasta as-is at this point, or continue on to bake it.
