CREAM PUFFS IN A PAN
This so easy and so much simpler than making individual ones.

Steps:
- 1. Bring water and butter to a rapid boil. Add 1 cup flour and beat with a fork. Mixture will mound like dough.
- 2. Turn into mixing bowl and add the eggs, one at a time and beat well after each one.
- 3. Spread on a well-greased 11 x 15 inch jelly roll pan. Bake at 350 degrees for 25-30 minutes or until lightly browned. Press down some if it mounds in the middle. Cool.
- 4. Cream softened cream cheese with the pudding and milk. Spread over puff pastry. Top with Cool Whip and then drizzle approximately 1/2 can of Hershey syrup, lengthwise over the dessert. (I only used about 1/4 cup drizzling over top.)
RASPBERRY JAM PUFF PASTRY HEARTS RECIPE BY TASTY

Steps:
- Preheat oven to 400˚F (200˚C).
- Cut the puff pastry into 9 equal squares.
- Taking one of the squares, place 1 teaspoon of raspberry jam in the center.
- Brush egg wash on each side of the square.
- Take each corner and bring them together the seal the jam inside the dough
- Flip so the pinched side is on the underside. Flatten with the palm of your hand until the patty is about 1-inch thick.
- Make 8 even cuts around the circle making sure the cuts do not touch in the center.
- Take 2 of the cut sections and turn them inward to create the heart shape. Repeat with the other 6 sections.
- Repeat with the remaining pastry squares.
- Bake for 15-20 minutes until pastry is golden brown and puffed.
- Serve with a sprinkle of powdered sugar.
- Enjoy!

- Blend Cheddar cheese, flour, and butter in a food processor until dough is a coarse-meal texture and forms into a ball. Wrap dough in plastic wrap and refrigerate for 30 minutes.
- Preheat oven to 400 degrees F (200 degrees C).
- Shape dough into 1 1/2-inch balls and place 1 inch apart on a baking sheet.
- Bake in the preheated oven for 5 minutes. Remove from oven; press thumb into top of each ball, creating an indentation. Spoon about 1 teaspoon pepper jelly into indentation. Bake until edges are golden brown, about 5 minutes.

VERY EASY DANISH (JAM FILLED PUFF PASTRY)
After the price of Danish went up again at my local bakery, I thought, 'I could make that'. So here's a nice easy recipe for a yummy pastry treat using ready-made puff pastry. You can use any type of jam (jelly) that you like - ie - apricot, blueberry, plum, etc.

- Grease an oven tray and preheat oven to 200 degrees Celsius (400 Fahrenheit).
- Cut 8 squares of equal size from the puff pastry sheets (or circles if you prefer).
- Place two teaspoons of jam (jelly) on 4 of the pastry squares. On the other 4 pieces, cut criss-crosses for ventilation and for prettiness.
- Press the criss-crossed pastry pieces on top of the jam covered pieces, and press together all around the edge using a little oil.
- Bake in oven for 20 minutes until puffed and golden.
- Allow to cool and enjoy.

PEANUT BUTTER AND JELLY PUFFS FOR SMALL (AND BIG) KIDS

- Preheat oven to 375°F.
- Roll out pizza dough on a lightly floured surface to 1/8 -inch thickness. Using a round cookie cutter or glass 3-inches in diameter, cut circles of dough (re-roll leftover dough).
- Place 1/2 teaspoon each of peanut butter and jelly in the center of each circle - do not spread. Wrap dough around filling and pinch shut. Place seam side down on a greased cookie sheet. Brush tops lightly with water or an egg wash, (1 egg beaten with 1 tablespoon water). If desired, sprinkle cinnamon and sugar on top before baking.
- Bake for 15 to 17 minutes until lightly browned. Serve warm. Let cool at least 10 minutes before serving; jelly gets extremely hot. To reheat, place in microwave oven on medium heat, about 5 seconds per puff.

PASTELITOS (GUAVA AND CREAM CHEESE PASTRIES)
In Havana - and in Cuban neighborhoods across the U.S. - pastry shops make many types of cakes and cookies, but the best-sellers are always the pastels and pastelitos, flaky pastries filled with meat, cheese, coconut custard or guava jam. According to "Paladares: Recipes from the Private Restaurants, Home Kitchens, and Streets of Cuba" by Anya von Bremzen (Abrams, 2017), the shape of the pastel correlates with the filling: Triangular pastels are filled with guava paste and cheese, while rectangular ones are filled with just guava. Versailles, a Cuban restaurant in Miami, follows this rule, but at home, just make them rectangular, and add a swipe of cream cheese if desired. You can find guava paste in bricks at Latin American grocers, or swap in about 1/2 cup jam or preserves for a nontraditional take.

- Heat the oven to 375 degrees. Line a baking sheet with parchment paper and set aside.
- Prepare an egg wash: In a small bowl, beat the egg with a pinch of salt and set aside.
- On a lightly floured surface, roll one sheet of puff pastry into an 8-by-12-inch rectangle roughly the size of a standard sheet of paper. (Keep the other puff pastry sheet in the refrigerator.) Dust off any excess flour and lay the rolled pastry sheet on the parchment-lined baking sheet. Dip a pastry brush into the egg wash, and paint a line in lengthwise along the center of the pastry sheet, followed by three crosswise lines, evenly spaced, forming a grid of 8 rectangles, each approximately 3 inches wide and 4 inches long. Brush edges with egg wash. Lay a slice of guava paste in the center of each rectangle (or dot with dollops of jam or preserves, if using). Spread some of the cream cheese, if using, on top of the guava paste (about 1 1/2 tablespoons cream cheese per pastry).
- Remove the second sheet of puff pastry from the refrigerator, and roll it out into an 8-by-11-inch rectangle, dusting with flour as needed to prevent sticking. Lay the second sheet of puff pastry on top of the first. Using the side of your palm, press around and between the mounds of filling, pressing out any excess air, and to glue the top pastry to the bottom, creating 8 even, rectangular pockets. Paint the top sheet of puff pastry with egg wash. Sprinkle the surface with sugar.
- Using a knife or bench scraper, cut out and separate the 8 pastelitos following the original grid in between the indentations in the dough. Trim the perimeter to neaten the rectangles. The dough should still be cool to the touch; if it is warm, return the pastelitos to the refrigerator on the baking sheet for 10 minutes to firm up before baking.
- Bake pastelitos until puffed and golden brown, about 15 minutes. Serve warm or at room temperature.
JAM TURNOVERS

- Heat the oven to 200C/180C fan/gas 6. Unravel the puff pastry on a lightly floured surface. Cut the pastry into six squares. Spoon the jam in the centre of each pastry square. Seal the edges by pressing down with a fork and brush with the egg. Lay on a lined baking sheet and bake for 20 mins. Dust with the icing sugar and serve with the clotted cream.

- Make jelly disk filling. Melt lychee cups in a saucepan over low/med heat, being careful not to burn. Optional: add food colouring/pigment. Then pour evenly into a lightly greased muffin pan and optional silicone mold. *note: you may need to cut jelly to fit in the creampuff.
- Make lychee puree: Blend lychee until smooth. Cook blended lychee with 2 tbsp lemon juice and 2 tbsp sugar over low/medium heat in a small saucepan. Cook until thickened, then refrigerate. Optional: pass through a sieve for a smoother texture.
- Make craquelin by creaming butter and sugar together. Then mix in flour. Roll the dough between two pieces of parchment and allow to firm up in freezer.
- Make choux by heating water and butter until it just starts to boil. Turn off the heat. Dump in all of the flour and mix vigorously with a rubber spatula. Continue mixing until the dough pulls away from the pan. Allow dough to cool for 10 min. Pour in 1 egg and mix QUICKLY until fully incorporated. It will look weird to begin with but keep mixing! Beat the last egg in a separate bowl, and stream the egg a little at a time into the dough while mixing(you may not use all the egg). Test the consistency by dipping in and lifting up your spatula, it should form a V and break off. The dough should also be able to hold its shape. If too stiff, add a bit more egg.
