KIELBASA STIR-FRY
My father used to make this recipe, it is very tasty and very easy. If you would like a smaller serving size just use less of everything, like only a half of a head of broccoli. The vegetables definitely add up!! This recipe is great and fun to work with.

Steps:
- Begin rice first, using instructions on package.
- Slice sausage in 3/4" pieces or smaller pieces if Desired and place in a heated wok or a large skillet.
- Add broccoli, cauliflower, carrots, onion, bell pepper, and garlic after the sauage becomes slightly browned.
- Let saute for approximately 8 minutes or until the onion becomes clear Add the soy sauce, worcestershire sauce and sugar and continue to saute until the vegetables are tender and the sausage is browned.
- Serve over rice and ENJOY!

CHICKEN SESAME NOODLE STIR FRY
Adapted from the a cookbook called 'Healthy Cooking for Your Kids'. Tired of 'hiding' vegetables in cheese sauces? Here is a nice way get your toddler to eat vegetables.

Steps:
- Mix vinegar, soy sauce, tomato ketchup, orange juice and honey together. Add the cornflour and stir until well combined.
- Heat the oil in a non-stick frying pan and stir fry the chicken strips for 3-4 minutes. (If you don't use a non stick pan the chicken will stick to the pan).
- Add the vegetables and stir fry for 4-5 minutes.
- Add the cornflour mixture and bring to a boil.(Another tip-Don't use an overly large pan like I did or you will find the cornflour mix spreads too thin and there won't be enough liquid cook the vegetables.).
- Meanwhile prepare the noodles according to the packet instructions, drain and add to the pan along with the sesame seeds. Mix well.

HOISIN NOODLE STIR-FRY
Here's a simple chicken stir-fry over noodles rather than the more common rice. From cooking.com Time does not include marinating time.

Steps:
- Combine all the marinade ingredients and the chicken in a dish and mix well.
- Cover and refrigerate for several hours or overnight.
- Drain the chicken from the marinade, reserve marinade.
- Add the noodles to a pan of boiling water and simmer, uncovered for 3 minutes; drain.
- Heat the oil in a wok or large pan, add the chicken in batches and cook, stirring, until the chicken is browned and tender; remove from the wok.
- Reheat the wok, add the onions and garlic and cook, stirring, until the onion is soft.
- Add the bok choy and bell peppers and cook, stirring, until the bok choy is wilted.
- Add the noodles, toss well and then transfer to serving plates.
- Blend the reserved marinade with the cornstarch and water.
- Add to the wok and cook, stirring, until the mixture boils and thickens.
- Return the chicken to the wok and stir-fry until heated through.
- Spoon onto the bok choy mixture on the serving plates.
- This recipe can be prepared a day ahead.

LOTTIE'S KIELBASA NOODLE CASSEROLE
Posted by request. A hearty casserole that my M-I-L frequently made for family gatherings. It was usually served with a tomato salad, pickles and rye bread.

Steps:
- Shred about 2 slices of bread, to make 1/2-3/4 cups of rye bread crumbs (set aside).
- Butter enough of the remaining rye bread to line the bottom of a large casserole, place it buttered side down.
- In a skillet, add 1 tablespoon butter and saute 1/2 the onions with the ground pork until onions are lightly browned.
- Mix onion, pork and any drippings into sauerkraut.
- In same skillet, add 2 tablespoons butter and saute remaining onions and mushrooms until onions are clear.
- In small saucepan, combine sour cream, mustard, milk and 1 tablespoon flour, mix well and heat over low heat, stirring constantly, until it thickens.
- Gradually stir in broth, continue heating and stirring until sauce thickens again.
- Stir mushroom mixture into sauce.
- Spread sauerkraut mixture evenly over bread in casserole pan.
- Spread parboiled noodles evenly over sauerkraut.
- Pour sauce mixture evenly over noodles.
- Cover noodles with a layer of kielbasa.
- Mix melted butter with bread crumbs, and spread over kielbasa.
- Cover casserole pan tightly with tin foil.
- Bake in preheated 350°F oven for about 25-35 min.
- or until noodles are tender.
- Remove foil, cover the top of casserole with shredded cheese.
- Return to oven uncovered and bake about another 10 minutes or until cheese is melted and bubbly.
- **Shortcut: You can substitute two 10 1/2 ounce cans Cream of Mushroom soup and 1 1/2 cups of milk for the"scratch sauce" (mushrooms, milk, sour cream, flour and broth).
- Mix soup, mustard, remaining sauted onions and milk together well and use in place of"scratch sauce".
ASIAN NOODLE STIR FRY
I had a craving for stir fry but just couldn't seem to find a recipe made with veggies my family liked. Maybe its a combo your family likes too!

Steps:
- Start water boiling for pasta.
- Combine mustard, tamari, chicken stock, and sesame oil and set aside.
- Heat a large non stick skillet over medium to medium high heat.
- Add 2 tablespoons veggie oil.
- Add crushed red pepper flakes to the oil, then the sliced chicken.
- Season with salt and pepper.
- Cook chicken 2 minutes then turn.
- Add pasta to water when it starts to boil.
- Add veggies and ginger to chicken mixture and stir-fry until all are tender (approx 10 mins).
- When pasta is al dente drain and add to chicken-veggie mixture.
- Pour sauce over top of noodles and stir.
- Let cook for 1-2 mins or until sauce is absorbed.
- (I often make this with just 8 oz of noodles to"lighten" it up a bit- Still fabulous!).

KIELBASA STIR FRY
For some reason, I was craving this one evening even though I had never had it before. I decided to try it and the family declared it a winner. I use Hillshire Farm's Turkey Polish Kielbasa, but I'm sure any kind will work.

Steps:
- Heat olive oil in large skillet over medium high heat. Add the onions and peppers and stir fry until tender.
- Add kielbasa and continue to stir fry until everything is golden and heated thoroughly, about 10-15 minutes.
- Serve over prepared long grain wild rice or couscous. (The garlic and/or Parmesan couscous varieties go especially well with it. My kids also like to add ketchup to theirs.).
JENNY'S KIELBASA NOODLE STIR FRY
This is one of my mother's one pot meals. The combination of rich, salty kielbasa with a light Asian-inspired noodle stir fry is just delicious! Adjust amounts to suit your preferences; personally, I love lots of veggies. Some cooks may prefer to use 2 links of kielbasa (it's so delicious I can't blame you!). Use turkey kielbasa to cut some calories. Prep time will vary depending on whether you chop your veggies or buy them sliced.

Steps:
- Boil and drain noodles according to instructions on package. Set aside.
- In a large wok, heat olive oil and add vegetables, soy sauce, garlic, pepper flakes and ginger. Saute till tender. Remove from wok.
- Slice kielbasa into 1/4 inch thick slices. Saute in wok until outside edges are slightly caramelized. Remove from wok and place on paper towels to absorb extra grease.
- Drain kielbasa grease and wipe wok with paper towel.
- Heat wok again to a fairly high heat. Add noodles, turning frequently. Once noodles are heated through, add vegetables and kielbasa. Mix well and keep turning. Add additional soy sauce, garlic, red pepper and ginger to taste.
- Enjoy!
