JICAMA RAINBOW SALAD

This is a take off from my other Jicama salad #8898 just a few additions to make it more colorful and a little different. It is a "do ahead" salad". It is so handy for company dinners and also busy day dinners. Make sure that your Jicama is very white inside and has no discolored spots outside-they should be a lovely smooth beige color. If you cannot find baby cukes use an English cuke, but remove the seeds. If you wish arrange this salad over fresh lettuce leaves. You may add some shrimp or chicken and serve this as a lunch salad

Steps:

  • Using a mandolin or very sharp knife, julienne the jicama, beets, and carrots and combine in a large bowl.
  • Slice off the ends of the oranges. Using a paring knife, remove the peel and pith from the oranges, following the curve of the fruit. Slice on either side of the membranes to remove the segments. Transfer the orange segments to the jicama mixture.
  • Squeeze enough juice from the membranes into a bowl, to make 1/4 cup. Whisk the lime juice into the orange juice. While whisking, drizzle in the oil to make smooth vinaigrette. Pour the vinaigrette over jicama mixture, toss to coat, and season with salt and pepper.
  • Transfer the jicama salad to a platter and sprinkle with the peanuts.

1 pound jicama (about 1 large), peeled
2 large beets, trimmed and peeled
2 large carrots, peeled and cut into 3-inch lengths
2 large navel oranges
3 to 4 tablespoons freshly squeezed lime juice (about 2 to 3 limes)
2 to 3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/4 cup unsalted peanuts, toasted and coarsely chopped

JICAMA FRUIT SALAD

This jicama fruit salad is also known as "pico de gallo" in Mexico. Not to be confused with the other pico de gallo, which is a savory salsa. This salad is very refreshing and very forgiving. Any fruits can be added but the original vegetable in this salad is always jicama.

JICAMA CITRUS SALAD

Never tried jicama? It is a crunchy Mexican turnip, and I love to use it in this super easy salad. The jicama is ideal alongside the vibrant flavors of the tangerines and shallots. Between the sweet and sour flavors in this salad and its crunchy texture, it's all delish if you ask me. -Crystal Jo Bruns, Iliff, Colorado

SUMMER CUCUMBER JICAMA SALAD

This is a really great cucumber salad that's light and flavorful and makes a great starter! Tastes fine as it is, but can be salted and peppered to taste, if desired. Just remember to add all ingredients and mix before adding in the tomatoes, as they are extremely delicate and do not withstand stirring very well once they are cut.

REFRESHING SWEET AND SPICY JICAMA SALAD (VEGAN)

I made this as a side dish with some grilled basil chicken and spicy Italian chicken sausages; it was perfect! If you don't like spicy food, just cut back on the Thai chiles. My boyfriend and I loved it!
