JAM-EASY FRUIT BARS

- Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening. In medium bowl, mix butter, granulated sugar, vanilla and egg with spoon. Stir in flour and baking powder until dough forms. Pat dough evenly in pan.
- Beginning 3/4 inch from short side of pan, press 1/2-inch-wide and 1/4-inch-deep groove in dough, using end of wooden spoon. Make 8 more grooves, each 1 1/2 inches apart. Fill each groove with slightly less than 1 tablespoon jam.
- Bake 20 to 25 minutes or until light golden brown. Cool completely, about 1 hour. Sprinkle with powdered sugar. For bars, cut into 8 rows by 4 rows.

JAMMIN GOOD BARS
One of the quickest, tastiest bar cookie recipes I've used. You can alter the taste by changing fruit preserve flavors. It's a perfect cookie to bring to any pot luck function, but make sure you bring the recipe too, people will ask for it!

- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, stir together the flour, sugar, baking powder, salt and cinnamon. Cut in the shortening until the mixture is coarse and crumbly. Stir in the egg. I use my hands to mix it all together, it just seems easier. Press about half of the mixture into the bottom of the prepared pan. Spread the raspberry preserves over the crust then sprinkle with the remaining crumb mixture.
- Bake for about 35 to 40 minutes in the preheated oven, until lightly toasted. Careful not to overcook. Cool in the pan on a wire rack. Then cut into squares, enjoy!

PUMPKIN JINGLE BARS

Steps:
- Mix first 4 ingredients in large bowl at medium speed of electric mixer until well blended.
- Pour into greased 15 x 10-inch jelly-roll pan.
- Bake at 350°F for 18-20 minutes or until bars just begin to pull away from sides of pan.
- Cool.
- Sprinkle with sugar.
- Cut into bars.
- Pipe a swirl of frosting in the center of each bar.
- In the center of each swirl put 2 slices of green gum drops to resemble holly leaves and 3 slices of the red gum drops to resemble holly berries.
- Very festive.
