BREAD MACHINE ITALIAN EASTER BREAD

This is a modified Italian Easter bread made with a bread machine. Saves time, kneading, etc. The same ingredients are used but simplified by using a bread machine. This was a recipe handed down by my grandmother.

Bread Machine Italian Easter Bread image

Steps:

  • Add in order given above to bread machine. Process for dough cycle. Roll and shape into braided rings. Let rise. Bake at 340 degrees for approximately 20-25 minutes.
  • This bread can also have colored raw eggs put in the braids before baking. They will cook to hard boiled egg stage. After baking, cool and frost with 2 cups powdered sugar mixed with approximately 1/4 cup milk and 1/2 teaspoons vanilla extract, then sprinkle with non-pareils.

Steps:

  • Add all the ingredients in order given except the raisins.
  • Add raisins in on the "add in" beep.
  • Bake on "sweet bread" setting.

1 cup water
2 tablespoons margarine
3 cups flour
3 tablespoons sugar
1 1/2 teaspoons salt

THE BEST RAISIN BREAD FOR BREAD MAKER / MACHINE

I have tried no less than 5 different recipes and several variations of Raisin Bread recipes before finding what I think is the best tasting recipe. It is a culmination of trail and error using various recipes found on the internet and in Bread Machine Cookbooks. This recipe makes approximately a 1.5lb (750gm) loaf.

The Best Raisin Bread for Bread Maker / Machine image

Steps:

  • Firstly, mix the flour, milk powder, sugar, salt and cinnamon together thoroughly in a mixing bowl making sure there are no lumps.
  • Now add the luke warm water and butter into the bread machine. (I divide the butter into four pieces and put one in each corner of the pan for easier mixing).
  • Then add the dry mixed ingredients into the pan. Make a small well in the centre of the dry mixture and add the yeast.
  • Set the Bread Maker / Machine to 'Sweet Bread' setting and wait for it to 'BEEP' (approx 15 minutes) before adding the raisins.
  • Wait until cooked and enjoy fresh or toasted with butter -- YUM !
  • ** If the mixture is too dry while mixing you can add a tablespoon of water. Alternatively if its too moist, a tablespoon of flour should sort it out nicely. **.

270 ml lukewarm water
1 tablespoon butter
3 cups plain white flour (I haven't tried bread flour)
1 tablespoon powdered milk
3 tablespoons brown sugar
1/2 teaspoon salt
1 tablespoon cinnamon or 1 tablespoon allspice
2 teaspoons dry yeast
1 cup raisins (I dust them in a little plain flour to coat them and prevent them sinking to the bottom of the loaf)

Steps:

  • Combine first 8 ingredients in a bowl.
  • Combine next 3 ingredients in a separate bowl.
  • Put them together, knead the bugger out of it (about 20 minutes).
  • Let it rest, and go rest yerself. Let it double in a warm place.
  • Add the raisins. Knead a little, mixing in the raisins, then shape into loaves. (The full recipe makes 8 large or 16 small braided loaves).
  • Let the loaves rise, covered, until doubled.
  • Bake at 325F for 30 minutes.

RAISIN BREAD - BREAD MACHINE

I like store bought cinnamon raisin bread for breakfast, so I started making this to save some dough. Get it, dough? Hahaha...heh. 1.5 lb loaf, from my fave bread book. I think I will add more cinnamon in the future, though this bread is OMG delicious when you spread butter on top and sprinkle a mixture of cinnamon sugar on top, then microwave it for 10-30 seconds. Mmm calories taste so good!

  • Add all the dough ingredients except the raisins to your bread machine pan. Select the DOUGH cycle and press start. After 12-15 minutes, open the lid and check the dough. It should be tacky and stick to the side of the pan before pulling away cleanly. Make corrections by adding either liquid or flour 1 tablespoon at a time until dough meets this criterion.
  • Add raisins or currants when the machine beeps that it's time to add any ingredients you don't want mashed by the kneading action. If your machine doesn't have this signal, add them during step #4 by working them by hand into the dough.
  • When the DOUGH cycle finishes, poke two floured fingers into the dough to see if it has proofed enough. Your fingers should leave an indentation that slowly fills in. If the dough bounces right back, let it sit in the bread machine a little longer and test again in 15-30 minutes.
  • Remove the dough from the bread machine to a lightly floured or greased surface. Form into a ball and flatten into a rough square shape. Cover and let rest for 10 minutes. Mix together the filling ingredients.
