SUGARED DATE BALLS

When I was a youngster, Mom always baked these tender old-fashioned cookies dotted with chewy dates and crunchy walnuts. Much to the delight of my family, I've continued her delicious tradition.

Sugared Date Balls image

Steps:

  • Preheat oven to 325°. In a bowl, cream butter and sugar. Beat in milk and vanilla. Combine flour and salt; gradually add to creamed mixture. Stir in dates and nuts. , Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Bake until bottoms are lightly browned, 22-25 minutes. Roll warm cookies in confectioners' sugar; cool on wire racks.

FROSTY DATE BALLS

My mom makes these every Christmas. They are really delicious and so pretty too, like they have snow sprinkled on top. Hence the name, "Frosty" :) These can be thrown together in about 30 minutes and keep in an airtight container for about 1-2 weeks.

Frosty Date Balls image

Steps:

  • Cream butter and 1/3 cup powdered sugar until light and fluffy.
  • Mix in water, vanilla, flour, salt, dates, and walnuts.
  • Roll into balls a little larger than the size of walnuts and bake on an ungreased baking sheet 2 1/2 inches apart at 300 degrees F for 20 minutes (Till soft but NOT brown.).
  • While warm, roll in powdered sugar OR sift powdered sugar over warm cookies.
  • *NOTE: Serving size is approximate!

Date-Nut Balls image

Steps:

  • Melt butter in a saucepan over medium heat; cook and stir dates and white sugar in the melted butter until thick and golden brown, 10 to 15 minutes. Remove saucepan from heat and stir in crispy rice cereal and pecans. Let mixture cool until easily handled, 5 to 10 minutes.
  • Form mixture into small balls using your hands.
  • Pour confectioners' sugar into a resealable bag; add date-nut balls and lightly shake bag until balls are coated.

Steps:

  • 1. Mix together in skillet - Dates, butter, brown sugar and water. Cook over medium heat for 10 - 12 minutes or until thickened to a paste.
  • 2. Remove from heat and add 1 tsp. vanilla
  • 3. Mix in 2 cups of the rice crispies. Allow to cool to touch then roll into small balls. Roll in coconut or powdered sugar. Serving size depends on how big the balls are.
