Roasted Acorn Squash with Jalapeno image

Steps:

  • Toss 1 diced seeded acorn squash, 1 sliced shallot, 1 sliced seeded red jalapeno and 4 thyme sprigs with olive oil on a rimmed baking sheet; season with 3/4 teaspoon kosher salt and some pepper. Roast at 425 degrees F, stirring occasionally, until the squash is browned and tender, about 25 minutes.

My friend Jo Ann shared this recipe with me after having it at her house one time. It is really delicous and so easy to make.

Steps:

  • 1. Mix soup, sour cream with onions, and carrots. Layer squash in greased pan then layer of sauce and layer of stuffing. Repeat. Pour butter over all and bake at 350 for 40 minutes.

6 c sliced squash, boiled & drained
1 can(s) celery/mushroom soup
1 c sour cream
1 c shredded carrots
1/2 c chopped onions
1 8oz pkg. pepperidge farm stuffing
1/4 c melted butter

Tender squash, gooey cheese and crunchy crackers make this a memorable side dish or a hearty main course. This is a great dish that can be made with low-fat ingredients and is still just as good!

Yellow Squash Casserole image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
  • In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9x13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
  • Bake in preheated oven for 25 minutes, or until lightly browned.
