KILLER PANCAKES
My family really liked these pancakes even my picky 7 yr old niece and 6 yr old newphew. They gobbled these right down and ate them with there hands like cookies. When I made these I used Splenda for baking and no sugar added fruit cocktail that was in pear juice. I did need to add a bit of water to my batter. I got this recipe from Family Time Dish.

Steps:
- Preheat the oven to 350 degrees F.
- Spray 2 non-stick cookie sheets with vegetable oil and set aside.
- Sift the dry ingredients together and set aside.
- Beat the egg whites until frothy.
- Beat in the juice.
- Gradually add the dry mixture, stirring until well blended.
- Fold in the fruit cocktail.
- Using an 1/8 cup (2 tablespoons measure), scoop dollops of pancake batter onto the sprayed pans, leaving at least 2 inches between the pancakes.
- Bake for 10 to 15 minutes or until puffed and golden.
- Serve hot with maple syrup, fresh strawberries, peaches, or other fruit.
THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

- In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together buttermilk, milk, and the egg yolks. In yet a separate bowl, using an electric mixer, beat the egg whites until stiff peaks form.
- Whisking constantly, add melted butter to the milk mixture. Pour the liquid ingredients into the bowl with the dry ingredients and whisk until just combined (do not overmix; a few lumps are okay.)
- When the flour has been combined but the batter is still a little lumpy, heat a non-stick skillet or griddle to medium-low heat. While the skillet is heating, gently (but completely) fold beaten egg whites into the batter. When the skillet is hot, rub a stick of butter over the pan, or spray it with a little non-stick cooking spray and then ladle pancakes onto hot skillet. You can also put your batter in a pitcher to make pouring easier.
- It takes a little adjusting to figure out where the temperature setting should be. When you start seeing bubbles, you’re almost there. When the bubbles pop and leave a hole, it’s time to flip. Gently slide a spatula under the pancake and quickly flip it to the other side. The other side won’t take quite as long as the first side–just check here and there and when the pancakes are golden brown on both sides, you’re good to go.
