- In a large pot over medium-high heat, brown the ground beef and sausage until totally browned. Remove the meat from the pot with a slotted spoon and put it into a bowl. Set aside.
- Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the onions and bell peppers. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
- Pour in the wine and allow it to bubble up and reduce for about 1 1/2 minutes. Add the crushed tomatoes, marinara sauce and tomato paste. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper if using and bay leaves. Stir, and then add the cooked ground beef and sausage and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
- After an hour, add the minced parsley and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
- Serve a big bowl of oiled noodles and the meat sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.

This is a wonderful meat sauce that is phenomenal! Everyone who has ever tried my sauce, says it's the best they've ever had. Have it be a special occasion, or an ordinary family meal; the combination of sweet & spice, with a hint of red wine and Italian herbs/sausage, will leave your audience's taste buds satisfied to every extent of the word - GUARANTEED! Be prepared though, as everyone who comes by this sauce will be asking you for the recipe ASAP...Enjoy =) ***Remember: High quality Italian sausage (or meat), and wine/beer definitely make for the best sauce possible.

Steps:
- 1. In large, heavy stockpot, heat up olive oil
- 2. Add onions and garlic to saute'. Continue to cook, stirring occasionally until onions are softened.
- 3. Take out sauteed onions and garlic & brown the sausage (out of casing).
- 4. Once meat is browned add garlic and onions back in pot.
- 5. Add tomatoes, tomato paste, tomato sauce and water.
- 6. Add basil, parsley, brown sugar, salt, crushed red pepper, and black pepper.
- 7. Stir well and barely bring to a boil.
- 8. Stir in red wine and splash of beer.
- 9. Stir in Flour & Parmesan cheese (for added thickness).
- 10. Simmer on low, stirring frequently for at least an 1 1/2 hours A longer simmer makes for a better sauce, just be careful not to let it burn!
- 11. Cook spaghetti according to package directions.
- 12. Spoon sauce over drained spaghetti noodles and sprinkle with Parmesan cheese.

Steps:
- In a Dutch oven cook meat onion, green pepper, & garlic till meat is brown & vegetables are tender.
- Drain off fat.
- Stir in UNDRAINED tomatoes, tomato paste, brown sugar, oregano, salt, basil thyme, & bay leaf.
- Bring to boiling & then reduce heat.
- Simmer, uncovered for 1 1/2 - 2 hrs or till sauce is of desired consistency, stirring occasionally.
- Remove bay leaf.
- Serve over spaghetti with parmesan cheese.
GRANDPA'S CLASSIC CONEY SAUCE
My Grandfather owned a drive-in restaurant back in the 1950's. This is his exact recipe for Coney Dogs from back in the day. I make this on special occasions and it is always hit with friends and family. Enjoy.

- Place the ground beef and onion in a large skillet over medium-high heat. Cook, stirring to crumble, until beef is browned. Drain. Transfer the beef and onion to a slow cooker and stir in the ketchup, sugar, vinegar and mustard. Season with celery seed, Worcestershire sauce, pepper and salt. Cover and simmer on Low setting for a few hours before serving.
