EJ'S SIMPLE RIBS
My son, EJ, loves these ribs, so I named them after him. I bake them with a spice rub, then baste them with sauce before they grill, and oh baby, are they moist and tender.

- In a small bowl, combine mustard powder, paprika, celery salt, onion powder, red-pepper flakes, garlic powder, celery seed, and 1 teaspoon salt. Rub slabs on both sides with the spice mixture, and refrigerate, loosely covered, for 2 hours.
- Preheat oven to 300 degrees. Stack slabs on a double layer of aluminum foil; tightly wrap. Place on a rack on a baking sheet. Cook until meat pulls away from the bone and is easily pierced with the tip of a sharp knife, 1 to 1 1/2 hours.
- Heat grill to medium-high; lightly oil grates. Carefully remove ribs from foil, pouring off any liquid. Brush generously on both sides with rib sauce; grill ribs until sauce begins to bubble and brown around the edges, 4 to 5 minutes per side. Serve ribs with any leftover sauce, if desired.

SMOKEY J'S RIB RUB
A great dry rub for ribs, pork, chicken, or anything else you like to toss on the grill. Rub this onto your meat, let it sit a bit, then let the smoke and heat work their magic. This recipe will make enough for 6-8 slabs of ribs, but if you're not making that much the rub will keep in a jar. You'll have some ready to go for your next BBQ!

- Combine all ingredients.
- Rub well onto all sides of your ribs, pork, chicken or other meat.
- Grill or smoke your meat right away, or, for best results, cover and place in the fridge for several hours or overnight.
- This rub goes well with a little applesauce basted onto the meat during cooking. Use just enough for one light coating.

EJ'S SIMPLE OVEN-BBQ RIBS

- Preheat the oven to 300 degrees F. Line a large baking sheet with a piece of aluminum foil that is large enough to cover the pan twice (you will be folding this over the ribs and sealing it).
- Arrange the ribs, meat side up, in one layer on the prepared baking sheet. In a small bowl, combine the Rib Rub, salt, pepper, and celery salt, and stir to combine. Divide the seasoning evenly between the 2 slabs of ribs, coating them well on both sides. Fold the extra length of foil over the ribs, and seal it tightly on all sides. Place the baking sheet in the oven and bake, undisturbed, for 2 1/2 to 3 hours, or until the ribs are very tender.
- Preheat a grill to medium-high (or leave the oven on).
- Remove the baking sheet from the oven and peel back the foil so that the ribs are exposed. Using a basting brush or the back of a spoon, coat the meaty side of the rubs lightly with barbecue sauce. Place the slabs of ribs, meaty side up, on the grill and cook until the barbecue sauce is thickened and lightly browned, 5 to 10 minutes. (Alternatively, return the baking sheet to the oven and continue to bake the ribs, without the foil covering, until the barbecue sauce is thickened and lightly browned, 20 to 30 minutes.)
- Plating / Assembly: Remove the ribs from the grill (or oven), and let them cool briefly. Then cut between the ribs and serve, with additional barbecue sauce on the side if desired.
BEST BARBECUE RIBS EVER

- Combine the brown sugar, chili powder, 1 tablespoon salt, 1 teaspoon black pepper, the oregano, cayenne, garlic powder and onion powder in a small bowl and rub the mixture on both sides of the ribs. Cover and refrigerate 1 hour or overnight.
- Preheat the oven to 250 degrees F. In a roasting pan, combine the broth and vinegar. Add the ribs to the pan. Cover with foil and tightly seal. Bake 2 hours. Remove the ribs from the pan and place them on a platter. Pour the liquid from the pan into a saucepan and bring to a boil. Lower the heat to a simmer and cook until reduced by half. Add the barbecue sauce.
- Preheat an outdoor grill to medium high. Put the ribs on the grill and cook about 5 minutes on each side, until browned and slightly charred. Cut the ribs between the bones and toss them in a large bowl with the sauce. Serve hot.
J'S RIB RECIPE

- Heat oil in med saucepan over med heat.press garlic into pan for 30 sec. Mix in ketchup, 3/4c broth, 3Tbl soy sauce,brown sugar,molasses,& vinegar. Bring heat to med low; simmer until reduced until reduced to 3cups, starring occasionally, about 15 min. Cover& chill. Sprinkle each side of rack with salt pepper,& 1Tbls chili powder. Arrange on racks. Position one rack in top third of oven and one in bottom third. Preheat to 450. Pour 1/2 cup remaining Broth & 2TBls soy sauce around ribs on each sheet; cover with foil. Bake 30 min and reverse sheets. Bake until tender, about 45 min. Uncover, cool slightly, brush generously with sauce. Can be made 2 hours ahead . Let stand at room temp Prepare grill med-high heat.grill until ribs are heated through and slightly charred, turning occasionally and brushing with more sauce, about 10 min.
RIBS FOR KIDS

- In a small saucepan, saute onion in oil until tender. Stir in the water, ketchup, vinegar, sugar, Worcestershire sauce, mustard, paprika and pepper sauce. Bring to a boil. UNCLE JJ'S RIB RUB
Quick and easy BBQ rub. Great for pork and chicken. When storing in an airtight container you can mix 3 tablespoons of cornstarch to prevent clumping. Apply liberally to both sides of meat that has been brought to room temperature. Let sit, covered, for 30 minutes before grilling or smoking the meat.
