ITALIAN PORK HOAGIES

"I like to prepare these quick toasted sandwiches whenever I have extra pork," writes Jackie Hannahs. The Fountain, Michigan cook spreads pizza sauce over hoagie buns before adding sliced pork, Italian salad dressing and mozzarella cheese.

Italian Pork Hoagies image

Steps:

  • Place bottom and top halves of buns, cut side up, on an ungreased baking sheet. Spread pizza sauce on the bottom half of each bun. Top with pork; drizzle with salad dressing. Sprinkle with cheese. , Bake at 350° for 5-10 minutes or until cheese is melted and tops of buns are lightly toasted. Replace bun tops.

If you prefer, you can grill the pork on a charcoal or gas grill. Use your favorite brand of barbecue sauce. If you want to spice it up, add a few drops of hot sauce.

Steps:

  • Cut a lengthwise slit down the center of tenderloin to within 1/2 in. of bottom. Open meat so it lies flat. Place on a rack coated with cooking spray in a broiler pan. Sprinkle with salt and pepper. Brush with 1 tablespoon barbecue sauce. , Bake at 400° for 15 minutes. Turn pork; brush with 1 tablespoon barbecue sauce. Bake 10-12 minutes longer or until a thermometer reads 160°. , Cut into 1/4-in. slices. Spread remaining barbecue sauce over cut side of bun bottoms;layer with pork, coleslaw and pickles. Replace bun tops.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat the vegetable oil in a large Dutch oven until it shimmers, and sear the beef and pork roasts on all sides until browned, about 3 minutes per side.
  • Pour the water over the meat, cover, and cook in the preheated oven for 2 hours. Uncover the Dutch oven, and remove and discard the bones from the beef roast. With a spoon or spatula, loosen the browned flavor bits from the bottom of the Dutch oven.
  • Mix together the ketchup, mustard, Worcestershire sauce, lemon juice, and salt and pepper in a bowl. Pour the ketchup mixture over the meat, stir to combine with the browned flavor bits, and cover the Dutch oven.
  • Reduce oven heat to 250 degrees F (120 degrees C), and cook for 2 more hours. Shred the meat with 2 forks, pile each bun with about 1/3 cup meat and sauce, and garnish with onion and pickles to taste.

Steps:

  • Rub roast with seasoning rub and cook in slow cooker on low 8 hours. Shred pork with 2 forks, right in the slow cooker. Combine next 3 ingredients and stir into shredded pork. Cover cooker and cook on low until pork is thoroughly heated. Serve on hoagies with southwestern salsa Coleslaw. Editor's Extra: You may substitute 4-6 chicken breasts for pork tenderloin and continue as directed. Also good on baguettes.

Steps:

  • Slice the rolls, but not all the way through.
  • Place the vinegar and oregano in a small bowl. Slowly whisk in the oil until emulsified.
  • Remove some of the bread from the center of each half of roll.(if desired)
  • Drizzle a little of the olive oil mixture on the bread.
  • Place first the meats, then the cheese in layers.
  • Top with the tomatoes, onions, then the lettuce. Drizzle with more of the dressing, as desired.
