BLUE CHEESE PECAN GREEN BEANS

- In 2-quart saucepan, place beans in 1 inch water. Heat to boiling; reduce heat. Simmer uncovered 8 to 10 minutes or until beans are crisp-tender; drain. Place in serving bowl; cover to keep warm.
- Meanwhile, in 1-quart saucepan, cook pecans over medium heat 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until nuts are golden brown and toasted. Place in small bowl; reserve.
- In same 1-quart saucepan, melt butter over low heat. Heat, stirring constantly about 6 minutes or until butter is golden brown. (Once the butter begins to brown, it browns very quickly and can bum, so use low heat and watch carefully.) Immediately remove from heat. Pour over beans; toss to coat. Sprinkle with cheese and reserved pecans.

In a small heavy skillet heat remaining 1/2 tablespoon oil over moderately high heat until hot but not smoking and sauté pecans with salt to taste, stirring frequently, until a shade darker, about 1 minute. Transfer nuts to paper towels to drain and cool. Coarsely chop nuts.
- Have ready a bowl of ice and cold water. In a large saucepan of boiling salted water blanch beans until just tender, about 3 minutes, and drain in a colander. Transfer beans to ice water, stirring until just cool. Drain beans well and add to dressing. Crumble blue cheese over beans and gently toss with half of nuts and salt and pepper to taste.
- Serve beans at room temperature topped with remaining nuts.

- Whisk shallots, 1 tablespoon of oil, vinegar and mustard in a bowl. Heat 1 tablespoon oil in a skillet over medium high heat until hot. Add pecans and salt. Saute for 1 minute. Drain on a paper towel and chop coarsely.

- Toss the green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.
- Cook the bacon in a large, heavy saute pan until crisp, about 5 minutes. Remove the bacon to a paper towel-lined plate to drain. Spoon off the excess bacon grease, leaving 2 tablespoons in the pan. Add the onion to the pan and saute until soft and very tender, 4 to 5 minutes. Sprinkle in the garlic and red pepper flakes and saute until just fragrant, about 1 more minute. Add the reserved green beans and the pecans and cook until heated through, 5 to 6 minutes more. Return the bacon to the pan, pour in the lemon juice and toss. Season with salt and pepper.

- Cook beans for 5 minutes and transfer to colander in ice water to stop cooking then drain well.
