KAHLUA® HOMEMADE

This recipe I love to make around Thanksgiving to drink or give as presents at Christmastime. The longer you wait the better it is, try and wait 4 weeks. I got this recipe from one of my own concoctions from trying several different recipes.

Kahlua® Homemade image

Steps:

  • Combine water and instant coffee in a pot; bring to a boil. Stir light brown sugar and dark brown sugar into coffee, reduce heat, and simmer, stirring every 15 minutes, for 3 hours. Remove from heat and cool completely.
  • Pour coffee mixture into a clean, large glass jar. Add grain alcohol, vanilla extract, and vanilla bean; cover with a tight-fitting lid. Let sit in a dark place, shaking occasionally, for 1 month. Divide into bottles, leaving a piece of vanilla bean in each.

1 cup instant coffee crystals (such as Folgers® Classic Roast)
2 cups light brown sugar
2 cups lightly packed dark brown sugar
1 (750 milliliter) bottle 190 proof grain alcohol (such as Everclear®)
2 teaspoons vanilla extract
1 vanilla bean, split lengthwise and halved

Chicken is baked in a sweet and savory sauce of Kahlua, honey, and soy sauce for an easy and delicious dinner.

Steps:

  • Preheat oven to 350 degrees. Oil a 9x13-inch baking dish with cooking spray.
  • Arrange chicken pieces in a single layer in baking dish.
  • Stir together coffee, Kahlua, honey, and soy sauce in a saucepan. Bring to a boil; lower heat and simmer until reduced by 1/3, about 8 minutes. Let cool slightly.
  • Pour coffee mixture over chicken pieces; turn several times to coat evenly. Bake, basting occasionally with pan juices, until no longer pink at the bone and the juices run clear, about 60 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Remove from oven and serve over rice.

Steps:

  • Blend jelly,barbecue sauce and 2 jiggers of Kahlua together throughly.
  • Dip chicken breasts into sauce and place into casserole dish.
  • I usually pour any extra sauce over chicken.
  • Bake on 350 degrees for 1 1/2 hours,turning and basting as needed.
  • During the last 1/2 hour,add 1 jigger of Kahlua to the sauce pan.

1/2 cup grape jelly
1 cup barbecue sauce

A very quick and easy dinner. If the sauce is thickened it is a coating for the chicken. If the sauce in not thickened it is a nice sauce for the chicken over rice.

Steps:

  • Sprinkle breasts with onion salt.
  • Brown in butter.
  • Combine remaining ingredients.
  • Pour over chicken.
  • Cover and simmer 35 to 40 minutes until done.
  • Thicken sauce with 2 Tbs cornstarch dissolved in 1/4 cup water if desired.

1 tablespoon butter
1/3 cup Kahlua
1/2 cup orange juice (add some concentrate too if available)
1 tablespoon lemon juice
1 teaspoon grated orange rind
