APPLE-GLAZED STUFFED PORK CHOPS
I've served these Apple Glazed Pork Chops for many dinner parties. All you need to add would be a green veggie, a crunchy green salad and you have a beautiful presentation for a lovely meal. These can be prepared, refrigerated and baked later in the day.

Steps:
- Preheat oven to 350°. Place first four ingredients in a large bowl. Add 3/4 cup juice and melted butter; toss until combined., Cut a pocket in each pork chop by slicing horizontally to the bone. Fill each with about 1/2 cup stuffing; place on a rack in a roasting pan. Sprinkle pork with salt and pepper. Add 1-1/2 cups apple juice to pan. Cover tightly with foil; bake until a thermometer inserted in pork reads at least 145°, 35-45 minutes., Place remaining stuffing in a greased 8-inch baking dish. Bake, covered, until heated through, 20-25 minutes., Meanwhile, for glaze, place brown sugar and remaining 1/4 cup apple juice in a small saucepan; bring to a boil, stirring to dissolve sugar. Reduce heat; simmer, uncovered, until mixture is reduced by half, about 5 minutes., To serve, brush chops with glaze. Serve with additional stuffing.

- Heat oven to 350ºF.
- Melt butter in large skillet on medium heat. Add apples; cook and stir 3 min. or until crisp-tender. Add hot water and stuffing mix; stir. Remove from heat. Let stand 5 min.; mix lightly.
- Spoon stuffing mixture onto cut-side of meat to within 1/2 inch of edge. Roll up, jelly roll fashion, starting at one short end. Place seam side down, in roasting pan sprayed with cooking spray.
- Bake 1 hour. Mix syrup, mustard and rosemary until blended; spread over meat. Bake 20 min. or until meat is done (145°F). Remove from oven. Let stand 15 min. before slicing to serve.

- Heat 1 teaspoon of olive oil in a large skillet, preferably cast iron, over medium heat. Add the onions and cook for 5 minutes. Add the carrots and cook for 5 minutes longer. Mix in the kale, 2 cloves of garlic, 2 teaspoons of caraway seeds, 2 teaspoons of salt and pepper to taste. Stir in the chicken broth, cover and simmer on medium-low heat for 30 minutes.
- Meanwhile, season the pork chops on both sides with the remaining garlic, caraway seeds, salt and pepper. Heat the remaining olive oil in a large, heavy skillet over medium heat. Add the pork chops and sear until browned, about 2 minutes per side. Place the pork chops on top of the kale mixture. Cover and cook for 20 minutes. Divide the pork chops among 4 plates and spoon the kale mixture over them. Serve immediately.

- In oven proof skillet, (Cast Iron works great) Sauté onions in olive oil. Add chopped kale and apple. Sauté until wilted and soft. Stir in almond meal or bread crumbs. Slit open chops along one side and stuff with mixture. Use toothpick to stitch closed. In same skillet add oil. Quickly sear one side of chops till nicely brown. Flip and finish second side in pan Or finish in hot oven 425 for 10 to 15 minutes depending on thickness of chops. Top with glaze for last 5 minutes. Equal parts maple syrup, coarse grainy mustard and fig jam. 1 to 2 Tablespoons each. Can substitute apricot or apple butter. Peel beets, cut into 1/2 wedges. Peel and cut carrots into 2 in lengths. Halve lengthwise if large. On nonstick roasting pan - Toss with olive oil, red wine vinegar, salt, pepper and rosemary to taste. Roast for 30- 35 minutes at 425. Turning once or twice. Till soft. Watch out that they don't burn.
PORK CHOPS WITH JAMMY-MUSTARD GLAZE
Fruit and mustard are two classic accompaniments to pork, and really, a juicy chop doesn't need much more than that for a sweet and tangy sauce. Mix together water, grainy mustard and any fruit preserve that's good with pork like cherry, fig, peach or apricot. Sear bone-in pork chops mostly on one side to prevent overcooking, then pour the fruit-mustard mixture into the skillet while they rest. The pork will stay moist, and its juices will have time to mingle with the sauce. Then just slice the pork and drape it in the velvety two-ingredient glaze. Eat with mashed or roasted potatoes and a green salad.

- In a small bowl, stir together 1/4 cup water, the preserves and the mustard. Set near the stove. Pat the pork chops dry, and season all over with salt and pepper.
- In a large (12-inch) cast-iron skillet, heat the oil over medium-high. Add the pork chops and cook, occasionally pressing down to make good contact with the skillet, until browned, 4 to 5 minutes. Reduce the heat to low, flip the chops and cook until opaque on the other side, 1 to 2 minutes. Pour in the jam-mustard mixture, turn off the heat, and let rest for 5 minutes.
- Transfer the chops to plates, then return the skillet to medium-low heat and simmer, scraping up browned bits, until the sauce has thickened slightly, 1 to 3 minutes. Taste and adjust seasonings. Every jam is different, so if it's too sweet, add more mustard, salt or black pepper; if it's too salty, add a little more jam; if it's too intense or thick, add a little more water; if it's flat, add salt. Spoon sauce over the pork chops.

- In a large shallow dish, combine the flour, salt and pepper. Add pork chops and turn to coat. In a large ovenproof skillet, cook chops in butter over medium heat until a thermometer reads 145°, 4-5 minutes on each side. - In a large pot, bring 3 quarts of water to a boil and add smoked meat. Reduce heat to medium and cook for 1 hour.
- Meanwhile, wash the kale thoroughly by filling the sink with water and a palm full of kosher salt (the salt helps to remove any impurities) and wash the kale thoroughly to remove any grit. Repeat this process three or four times or until there is no grit left on the bottom of the sink; drain.
- Tear greens into large pieces and discard the thick vein. Discard any leaves that are bruised or yellow.
- When the pot ham hock has boiled for at least an hour, place greens in pot with meat and season with salt and pepper. You may need to add the kale in bunches. Add a bunch then press down with a spoon. This doesn't take long.
