KARAK CHAI

I found this tea on a recent trip to the UAE but have learned that it is popular all over the Middle East. Roughly translated, karak chai means 'strong tea'. It differs from Masala chai by using fewer spices, slightly stronger tea, evaporated milk, and lump sugar. I make up a big batch in the morning and drink it throughout the day. It's nice chilled or reheated.

Steps:

  • Heat water in a small saucepan until bubbles start to form around the edges. Add tea bags. Reduce heat to a simmer.
  • Lightly crush lump sugar, ginger, cinnamon, rose buds, and cardamom pods in a mortar. Stir into the pot. Simmer until the tea bags and spices have become saturated, about 3 minutes. Add evaporated milk. Stir and simmer, without boiling, until sugar has dissolved and tea reaches the desired strength, about 8 minutes for strong tea. Strain into mugs.

  • Bring 6 cups water to a boil in a medium pot or tea kettle. Add tea bags, cardamom, cinnamon, sugar, and vanilla extract and return to a boil. Stir in evaporated milk and return to a boil again, watching carefully to ensure the tea doesn’t boil over. Reduce heat to medium-low and simmer until thick, creamy, and caramel in color, about 30 minutes. (The longer the tea simmers the stronger and creamier it will be.)

  • Place all ingredients except baking powder into blender. Blend until the batter is formed. It won’t be a smooth and silky batter, instead you’ll still see pieces of barley. Don’t worry; this is okay. When the batter is done, mix or blend in the baking powder.
  • Line a round 7 inch cake tin with parchment paper and pour the batter in. If you use a bigger cake tin, the bread will be thinner and need less baking time.
