- 1. Preheat oven to 325°F. 2. Crumble cookies into bite-size pieces and add to a small oven-safe baking dish. In a bowl, add egg, egg whites, soy milk, cinnamon and vanilla extract. Whisk together thoroughly. Pour over broken cookies and let soak for 30 minutes. 3. Place mixture in oven and bake for 30 minutes, until it is firm but not dry. Top with chopped walnuts and serve.

PUDDING OATMEAL COOKIES
If you like the chocolate chip cookies with the pudding in them (recipe #69521) you should try these too. They are the best oatmeal cookies I have ever had. So soft and yummy! I usually use butterscotch pudding. If I use the vanilla pudding, I put butterscotch chips in them instead of raisins.

- Mix flour with baking soda.
- Combine butter, the sugars and pudding mix in a large mixing bowl.
- Beat until smooth and creamy.
- Beat in the egg.
- Gradually add flour mixture, then stir in oats and the raisins.
- Drop rounded teaspoonfuls on ungreased baking sheet.
- Bake at 375°F about 10-12 minutes.
- Other flavor pudding mixes can be used.

- Set oven to 375 degrees.
- Lightly grease baking sheets.
- In a bowl, beat shortening and butter at medium speed with an electric mixer, until creamy; gradually beat in sugars, beating well.
- Add in the 2 eggs; beat until blended, then mix in the pudding mix and vanilla.
- In another bowl, combine the flour, and the next 4 ingredients.
- Gradually add to the butter/egg mixture, beating until blended.
- Stir in the chocolate chips, nuts and oats.
- Shape the dough into 1-1/2-inch balls.
- Place on a cookie sheet, leaving enough space between the balls.
- Press the balls to 1-inch thickness (the bottom of a glass works well for this).
- Bake for 10-12 minutes.
- Remove cookies to wire racks.

- Preheat oven to 350°. Grease a 9-in. springform pan with 1 tablespoon butter. Cube remaining butter; place in a small saucepan. Add chocolate chips and brown sugar. Cook and stir over medium heat until sugar is dissolved. Remove from heat., In a large bowl, whisk eggs, milk, vanilla, espresso powder and salt. Gently stir in bread; let stand until bread is softened, about 15 minutes. Fold in chocolate mixture. Transfer to prepared pan. Bake, uncovered, until a knife inserted in center comes out clean, 45-55 minutes. Cool on a wire rack 15 minutes., Meanwhile, for sauce, heat cream in a small heavy saucepan until bubbles form around sides. In a small bowl, whisk together egg yolk, brown sugar and salt. Whisk a small amount of hot cream into egg mixture; return all to pan, stirring constantly. Cook and stir until mixture is thickened and coats the back of a spoon. Stir in butter. Fold in pecans and coconut. If desired, stir in brandy. Cool., For whipped cream, beat cream until it begins to thicken. Add confectioners' sugar and, if desired, brandy; beat until soft peaks form., Loosen sides of pan with a knife. Carefully run a knife around edge of springform pan to loosen; remove rim from pan. Serve pudding warm with sauce and whipped cream.

COPYCAT KASHI COOKIES
I found these on another website, which I think came directly from Kashi. I have a newfound love for Kashi's TLC Oatmeal Raisin Flax Cookies, so I figure these should be good. I have yet to try these. Hopefully they're similar. These are healthy, too. Never a bad thing :)

- Preheat oven to 375 degrees F. Lightly grease a cookie sheet.
- Beat margarine for 30 seconds with electric mixer on high. Add evaporated cane juice, cinnamon, and baking powder; beat until combined.
- Beat in in egg, milk and vanilla. Slowly beat in flour and Kashi Flakes until no more can be added; combine the rest by hand.
- Stir in dried fruit. Drop by rounded teaspoon on to lightly greased cookie sheet.
- Bake for 8-10 minutes, or until edges are golden brown.

- Using a hand mixer or a stand mixer fitted with paddle attachment, cream the softened butter and both sugars together on medium speed until smooth, about 2 minutes. Add the eggs and mix on high until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. Add the vanilla and molasses and mix on high until combined. Set aside.
- In a separate bowl, whisk the flour, baking soda, cinnamon, and salt together. Add to the wet ingredients and mix on low until combined. Beat in the oats and chocolate on low speed. Dough will be thick, yet very sticky. Chill the dough for 30-60 minutes in the refrigerator (I always chill this dough for only 30 minutes). If chilling for longer (up to 2 days), allow to sit at room temperature for at least 30 minutes before rolling and baking. The cookies won’t spread as much if chilled for longer than 1 hour.
- Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
- Roll balls of dough (about 1 and 1/2 Tablespoons of dough per cookie) and place 2 inches apart on the baking sheets. I recommend using a cookie scoop since the dough can be sticky. Bake for 11-12 minutes or until lightly browned on the sides. The centers will look soft and under-baked. Remove from the oven, immediately sprinkle each with sea salt (if using), then let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. The cookies will continue to “set” on the baking sheet during this time.
