KAT'S BREAKFAST SCRAMBLE

Ready, Set, Cook! Special Edition Contest Entry. I have been making the breakfast for my family for over 30 years. This is a wonderful full of flavor breakfast scramble. Made with Bacon, Sausage, Simply Diced Potatoes with Onions, Red and Green Bell Peppers, Green and Red Onions and spices.

Steps:

  • In a large skillet on medium heat cook the Bacon, when the bacon is halfway done add the sausage, Minced Garlic, Green and Red Bell Peppers, Red Onion. In another skillet prepare the Simply Diced Potatoes with Onions as per package. When potatoes are almost done add the two skillets together and mix well. Add Cayenne Pepper, Chile Pepper, salt and pepper mix well. Add the Eggs and staring until eggs and potatoes are done. Add cheese just before you remove from heat.

1 lb bacon, cut into pieces
1/2 lb sausage, cut into bite size pieces (I like the Hot Sausage to give a little bite, but any type you like works great)
12 large eggs, beaten
1 medium red bell pepper, chopped
1 medium green bell pepper, chopped
1 bunch green onion, chopped
1/2 cup red onion, chopped
1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
4 garlic cloves, minced
1/2 tablespoon cayenne pepper
1/2 tablespoon chili pepper
1 cup cheddar cheese
1 cup monterey jack cheese
salt
pepper
