Steps:

  • Make khameer 1 night before.
  • Sieve flour and salt, add aniseeds and butter.
  • Mix well.
  • Gradually, add egg, warm milk and khameer.
  • Knead well.
  • Cover and leave the dough in a warm place for 2 hours.
  • Divide the dough into 10 parts.
  • Shape them into balls with the help of dry flour.
  • Cover and leave them for 15 minutes.
  • Flatten each ball into a pancake by tossing it from one hand to the other.
  • Now pull one side gradually to make a triangle or oval shape.
  • Brush with ghee and sprinkle poppy seeds on one side and a little warm water on the other.
  • Stick the moistened surface of the pankcake to the hot wall of the clay oven (tandoor).
  • You can use an electric or gas tandoor or you can use a griddle after applying warm water and ghee.
  • Place the pancake on a hot griddle, the moistened side down.
  • When the lower surface is baked, invert the griddle along with naan over direct heat.
  • Allow the upper surface to cook.
  • Serve with any barbecued dish.

Steps:

  • Place dates in a large glass measuring cup or bowl. Add water; set aside until softened. Use an immersion blender or food processor to puree until smooth. Pass mixture through a fine mesh sieve, discarding solids.
  • In the bowl of a stand mixer, whisk together 7 cups flour, sugar, milk powder, yeast, fennel, salt, cardamom, and saffron. Attach bowl to mixer and fit with dough hook attachment. Add date water mixture and mix on low until smooth, about 5 minutes. The dough should be sticky and moist but not too wet. Add up to 1 cup more flour if necessary. Cover bowl with plastic wrap and set aside until dough has doubled in bulk, about 2 hours.
  • Transfer dough to a lightly floured surface. Divide dough into 12 equal pieces, about 4 1/4 ounces each. Roll each piece into a ball and divide them evenly between two lightly floured rimmed baking sheets. Cover with plastic and set aside until puffed, 20 to 30 minutes.
  • Preheat a large cast-iron Dutch oven over high and a small cast-iron griddle over medium-high until very hot. Fit two rimmed baking sheets with wire racks; set aside.
  • When the pans are hot, use your hands to flatten one ball of dough into a 5-inch round. Brush one side well with water and immediately transfer round, water-side down, to the hot griddle. Brush top of dough with egg wash and sprinkle lightly with salt and desired topping. Cook until bottom of dough is brown and bubbles are starting to form in the dough, about 1 1/2 minutes. Adjust heat as necessary to keep pan hot but not too hot.
  • Carefully flip griddle and place on top of heated Dutch oven, bread-side down. Adjust griddle to prevent any gaps between the two. Cook until the bread is puffed and golden brown, about 2 1/2 minutes. Use a metal spatula to remove the bread from the griddle to prepared rack. Brush top of bread with ghee. Repeat with the remaining dough. (Keep dough in refrigerator if your kitchen is too warm.)

1/2 teaspoon ground cardamom
Pinch of saffron threads
1 large egg, lightly beaten
Za'atar, sesame seeds, or caraway seeds, for topping
Ghee, for brushing

  • To make the Naan: In a large bowl add 1 cup warm milk and one packet (7g) of yeast. Allow the yeast to activate for a few minutes before adding the following one at a time and stirring in between: oil, yogurt, salt, sugar then eggs. Finally add in the flour and knead the dough until it is combined. Allow this to rise, covered, for about 1.5-2hrs
  • For the cooked keema filling. Add some oil into a pan. Add in all the ingredients aside from the onion and coriander and fry on high till the meat has changed colour. This is usually enough time for the chicken to have just cooked. For lamb/beef, you may need to add half a cup of water and simmer on low until the meat is cooked. Please dry out ALL the moisture from the keema because the Naans will break if the mixture is wet. Add the onions and coriander at the end
  • To assemble: Evenly divide the Naan dough into 5 portions. Roll one portion out till it's about the size of your hand when stretched open. Using a spoon, load in the keema filling.
