KIM'S SALSA
This recipe is a favorite of all my friends. Whenever they come over, they want to leave with a jar. Therefore, when I make it I can 14 GALLONS each time. I figure, if I'm gonna spend all day making it, I might as well only do it once a year! I like to serve this salsa with tortillas or use it in cooking. It's great in scrambled eggs and chili.

Steps:
- Combine the tomatoes, tomato paste, onion, green pepper, garlic, jalapenos, sugar, chili powder, vinegar, salt, and cumin in a large saucepan. Bring mixture to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the salsa is thickened and is noticeably darker in color, at least two hours. Cool and store it in the refrigerator for up to two weeks or in the freezer for three months.

SALSA CHICKEN
Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!

Steps:
- Preheat oven to 375 degrees F (190 degrees C)
- Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
- Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
- Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

SIMPLE SALSA CHICKEN

- Place chicken in a shallow 2-qt. baking dish coated with cooking spray. Sprinkle with salt. Combine salsa and taco sauce; drizzle over chicken. Sprinkle with cheese. , Cover and bake at 350° for 25-30 minutes or until a thermometer reads 170°. If desired, serve with lime wedges and sliced avocado.

KIM'S CHICKEN SALSA SOUP

- In a large dutch oven saute the onion for 5-6 minutes, add in garlic and simmer for 4 minutes Add in broth and get warmed up, + chicken Simmer for 15 minutes, add in salsa and simmer Add in cut up cilantro SERVE with a tsp of sour cream mixed in with each serving top with avocado, if desired

- In bowl, take cubed chicken and roll into flour. In small bowl, heat up couple tbsp of olive oil, garlic and broccoli (or vegetable of choice). Cook to your liking. In large skillet, heat up a couple of tbsp of olive oil and couple of cloves of garlic. Gradually add cubes of flour-ed chicken. Flip chicken, cook through. Once chicken is fully cooked, add jar of salsa and vegetable. Mix together, heat for additional 3 minutes or so on medium heat. Salsa will thicken once it hits flour on chicken, etc. To serve: I usually serve over brown rice and sprinkle shredded mexican cheese on top.
