KITTENCAL'S CHINESE LEMON GINGER SAUCE/GLAZE

Use this sauce for whatever you want, it makes a great sauce to use with deep-fried chicken or pork balls, this is a sweet and tangy sauce but not too sweet, you can always add in more brown sugar if you prefer a sweeter taste

Kittencal's Chinese Lemon Ginger Sauce/Glaze image

Steps:

  • In a medium saucepan mix all ingredients together until blended; bring to a simmer over medium-high heat whisking vigorously and continuously until bubbly and thickened.

1 1/2 cups cold water
1/2 cup fresh lemon juice (I just use the juice of one whole lemon then add in bottled to make 1/2 cup)
6 tablespoons light brown sugar (for a sweet sauce increase the brown sugar)
3 tablespoons cornstarch
3 tablespoons honey
2 teaspoons chicken bouillon granules (I just use 1 small envelope of OXO chicken bouillon granules)
1/4-1/2 teaspoon ground ginger
yellow food coloring (optional)

Steps:

  • Combine ingredients in a saucepan on medium heat until the sugar is dissolved.
  • To make glaze: Mix 1/2 tablespoon cornstarch with 1 tablespoon water. Heat sauce on medium high heat and add cornstarch water mixture. Simmer until thickened about 1 minute.

1/2 cup soy sauce
1/4 cup water
2 tablespoons sweet rice wine
1 1/2 tablespoons brown sugar
1 tablespoon honey
1/4 cup sugar
1 1/2 teaspoons garlic, minced
1 1/2 teaspoons gingerroot, grated
1 teaspoon toasted sesame oil
1/2 tablespoon cornstarch
1 tablespoon water

KITTENCAL'S SPICY GLAZED MINI GARLIC COCKTAIL MEATBALLS

This may also be made using Lil Smokies in place of meatballs --- these are at there best served from a crockpot with a long fork, you may bake the meatballs, cool then freeze just thaw in refrigerator overnight and drop in the simmering sauce, the meatballs may be oven-baked or cooked in a skillet --- you might need to adjust the sauce ingredients to suit taste, if you like more cranberry flavor then increase the cranberry sauce by half a can or one can --- also see my recipe#69173

Kittencal's Spicy Glazed Mini Garlic Cocktail Meatballs image

Steps:

  • Place all ingredients in a large bowl; mix well using clean hands (you might need more breadcrumbs to hold the mixture together).
  • Shape into about 1-inch balls.
  • Place on a baking sheet.
  • Bake 350 degrees for about 22-25 minutes or until cooked through or you may fry in a skillet.
  • For the sauce; in a large saucepan over medium heat blend the cranberry sauce, chili sauce, brown sugar, lemon juice (start with 2 tablespoons lemon juice) and hot sauce to taste; mix to combine then adjust ingredients to suit taste if desired.
  • Add in the cooked meatballs and simmer for about 45 minutes.
  • transfer to a chafing dish or crockpot to keep warm.

2 lbs extra lean ground beef
2 -3 tablespoons fresh minced garlic (can reduce amount)
2 small eggs
2 (1 ounce) packages lipton dry onion soup mix

Frank's red hot sauce (to taste)

GINGER GLAZE

Brushing this over grilled ribs produces a spicy sweet glaze. It can also be brushed over roast pork or baked ham for equally nice results. Store in the refrigerator for up to three days. Rewarm it over low heat before using.

Steps:

  • Beat together all ingredients.
  • Simmer over low heat for 5 or 10 minutes.
  • While glaze is still warm, brush it over meat only during the last 15 minutes of cooking, to prevent the sugar in the glaze from burning.

The soy sauce has a slightly dominent flavor to this glaze so if you are not a lover of soy sauce then pass this by, or you may use 1/2 cup soy sauce and 1/4 cup water --- depending on how sweet you want this sauce you may adjust the honey or brown sugar to suit taste, start with stated amounts and add in more if desired ---you may also adjust the chili flakes to suit heat level, if you are in a hurry you could omit browning the chicken firstly --- serve with cooked rice.

Kittencal's Asian-Glazed Baked Chicken image

Steps:

  • Set oven to 400 degrees F.
  • Grease a 13 x 9-inch baking dish.
  • Using your hands gently squeeze out as much excess water from the chicken pieces as possible, then dry using a paper towel/s.
  • For glaze; in a bowl whisk the soy sauce with cornstarch, ginger and sesame oil (if using) until smooth. then add in honey, brown sugar, ketchup and chili sauce; whisk/mix until combined (taste the sauce if you prefer a slightly sweeter taste then add in more honey or brown sugar).
  • In a small saucepan heat oil over medium-high heat.
  • Add in onion and saute for about 3 minutes or until slightly softened, then add in the chopped garlic and chili flakes and cook for about 2 minutes.
  • Add in the soy sauce mixture; bring to a simmer mixing constantly, cook until bubbly and thickened (the mixture will be fairly thick) set aside.
  • Heat a small amount oil in a skillet over medium-high heat (you may lightly season the chicken with black pepper before browning if desired but do NOT salt).
  • Add in chicken and brown on both sides; remove to prepared baking dish.
  • Pour the sauce over the chicken then using your hands or tongs turn the chicken pieces to coat in the sauce (make certain that the chicken is facing skin side up).
  • Bake uncovered for about 45 minutes or until completely cooked, basting with the pan glaze about halfway through cooking time.
  • Serve with cooked rice.
