Steps:
- Tear up bread slices into the bowl of a food processor; process into fine crumbs. Add ground lamb and egg; process until blended. Add parsley, garlic, cumin, mint, allspice, salt, and pepper; process until evenly combined.
- Roll lamb mixture into small meatballs.
- Heat olive oil in a large skillet over medium heat. Cook meatballs in batches, turning occasionally, until browned on all sides, 4 to 5 minutes per batch. Transfer to a paper towel-lined plate using a slotted spoon.

Steps:
- Place onion, parsley, mint, oregano and garlic in bowl of food processor. Pulse until minced. In large bowl, combine herb mixture, lemon pepper, salt, paprika and cumin. Add lamb; mix lightly but thoroughly. With wet hands, shape into 16 balls. In a large skillet, heat 1 tablespoon oil over medium heat. Brown meatballs in batches; drain. Remove and keep warm. Serve meatballs over cooked couscous. Top with yogurt, tomato wedges, and red onion. Garnish with mint leaves and lemon wedges.

KOFTA MEATBALLS - BEEF
This is just one of several Kofta recipes that I shall be posting. A favourite dish for parties and gatherings in India. Very cheap to make. You can make your own ghee by clarifing butter. I serve this with a vegetable curry and rice. This is a good dish for beginers to make.

Steps:
- In a blender mix together the meat, half of the onions and half of the garlic with the parsley.
- Add the egg and mix into the meat.
- Form the meat into balls the size of a walnut.
- Heat the oil in a deep pan and fry the meat balls till they are browned. Remove from pan.
- In a pan melt the ghee and fry the onions till golden. Add all the spices and ginger, and cook over low heat for 10 minutes.
- Add the meat balls and cook for 20 mins, stir them gently do not allow them to stick to the pot.
- Add the yogurt stir and cook for 20 minutes.
- Serve.

- Add the chopped onions, mint, and parsley to the well of a food processor. Pulse 8-10 times until the herbs and onions are minced. Add the spices to the onion and herb mixture and pulse a few times to incorporate the spices. Break up the ground beef into chunks and it to the spiced onion and herb mixture, then add the egg yolk. Pulse the mixture until the ingredients are completely incorporated into the ground beef.
- Form meatballs that are 1.5" in size (mine were about 1 heaping tablespoon each, for a total of 18) and set aside.
- Heat a cast iron pan over medium heat. Add the avocado oil and heat until it shimmers. Add half the meatballs to the cast iron pan and brown, giving the pan a gentle toss every minute or two, until the meatballs are browned on all sides. Remove the brown meatballs and set aside. Repeat with the remaining batch.

- Preheat the oven to 425ºF. Dice the zucchini and yellow squash. Reserve 1/4 of the red onion for the meatballs and cut the remaining 3/4 into 1-inch slices. Place the chopped zucchini, squash, onion, and grape tomatoes on a large baking sheet.
- Drizzle the olive oil over the vegetables, then add the garlic powder, oregano, salt and pepper. Use your hands to toss the vegetables in the oil and spices until they are evenly coated. Spread the vegetables out evenly over the baking sheet, then transfer them to the oven.
- Roast the vegetables in the oven for 40 minutes, or until they are wilted and browned on the edges, stirring once half way through.
- While the vegetables are roasting, prepare the meatballs. Mince the remaining 1/4 red onion. Add the ground beef, red onion, minced garlic, chopped parsley, oregano, cumin, cloves, cinnamon, and salt to a bowl. Mix the ingredients together until they are well combined.
