SWEET PINEAPPLE CASSEROLE

Steps:

  • Preheat oven to 350°. In a large bowl, combine eggs and pineapple. In another bowl, combine sugar, cornstarch and cinnamon. Stir in pineapple mixture. , Transfer to a greased 2-qt. baking dish. Dot with butter. Bake, uncovered, until golden brown, 1-1/4 hours.

Steps:

  • Peel and roughly chop sweet potatoes into large chunks. Place into a large pot and cover with water. Bring water to a boil, reduce heat to med-high, and gently boil for 10-20 minutes, until the potatoes are fork tender. Drain. Preheat oven to 375F. Lightly grease a 2.5 quart (10 cup) casserole dish and set aside. Prepare the crumble topping: Pulse the oats in a food processor until coarsely chopped. In a medium bowl, stir together the chopped pecans, oats, almond meal/flour, cinnamon, and salt. Pour on melted coconut oil, melted butter, honey and maple syrup. Stir until combined. Once cooked and drained, place sweet potatoes into a large bowl. Mash potatoes with the butter and coconut oil until smooth. Now, stir in the maple syrup, applesauce, vanilla, cinnamon, nutmeg, and salt. Adjust to taste if desired. Spoon into casserole dish and smooth out. Sprinkle the crumble topping all over the sweet potato mixture, evenly. Bake, uncovered, at 375F for 16 to 23 minutes, until the dish is hot throughout. 4.5-5 pounds sweet potatoes (approx. 4-5 large)
1 1/2 tablespoons vegan butter
1 1/2 tablespoons virgin coconut oil
2 1/2 tablespoons pure maple syrup, or to taste
1 teaspoon pure vanilla extract
1/2 cup applesauce
3/4 teaspoon cinnamon
1/8 teaspoon ground nutmeg
1/2 teaspoon fine grain salt, or to taste
FOR THE CRUNCHY NUT CRUMBLE:
1 cup rolled oats (use certified gluten-free)
1 1/3 cups pecan halves, chopped
1/3 cup almond meal or almond flour
1 teaspoon cinnamon
1/4 teaspoon fine grain sea salt
2 tablespoons virgin coconut oil, melted
2 tablespoons vegan butter, melted
2 1/2 tablespoons pure maple syrup
2 1/2 tablespoons raw honey

Steps:

  • Fill a large pan with boiling water from the kettle and set over a medium-high heat. Carefully drop in the whole, unpeeled sweet potatoes and cook for 30 minutes until very tender when pierced with the tip of a sharp knife. Drain well and leave to cool for 10 mins, then peel.
  • Heat the oven to 180C/160C fan/gas 4. Tip the peeled sweet potatoes into a large bowl, add the butter and mash with a potato masher until completely smooth. Tip in the brown sugar, milk, eggs, spices and vanilla and whisk until everything is combined and smooth.
  • Lightly butter a 20 x 30cm baking dish, then scrape in the sweet potato mixture. To make the topping, rub the butter into the flour, then stir in the brown sugar, pecans and a good pinch of salt. Sprinkle the topping evenly over the sweet potato filling, then bake for 45-50 mins until golden on top.

  • Boil potatoes: place the sweet potatoes in a large pot. Add enough water to the pot to cover the potatoes half way (a little more than half way). You will need at least 3-4 inches of water but the water will not completely cover the potatoes!
  • Bring the water to a boil and then turn the heat to a medium simmer. Simmer them until they are fork tender. It may take 20-40 minutes to cook your sweet potatoes depending on the size of the potatoes, but you don't want them to be mushy!
