NAN'S CHILI
This chili is great with or without beans. I prefer without, but my family prefers with. It's an adaptation of Wic Fowlers chili mix. I measured the ingredients one time and added my own touches to change the recipe to our taste. You can speed up cooking time using the pressure cooker for 15 minutes.

Steps:
- Brown ground beef.
- Add tomato sauce, tomatoes and water.
- Stir in the onion, garlic and seasonings.
- Add beans and simmer 30- 45 minutes.
- Serve with saltine crackers to crush into the chili.

LADY BUG CHILI
This is the 2006 winner of the Terlingua International Chili Championship. After trying this, I will NEVER use canned, frozen or a chili mix again. I have changed it slightly due to availability of ingredients. If you like chili, you will love this recipe.

Steps:
- Make 3 seasoning packets, as follows:.
- Packet #1: mix together 1 tablespoon onion powder, 2 teaspoons of garlic powder and 1 tablespoon of chili powder.
- Packet #2: mix together 5 tablespoons of chili power, 2 teaspoons of cumin, black pepper, cayenne pepper, beef bullion and chicken bullion, brown sugar and adobo sauce.
- Packet #3: mix together 2 teaspoons chili powder, 1 tsp cumin and salt.
- In a 4-quart pot, brown the ground beef. After browning, drain the meat. Add back to pot along with 1 can of beef broth and the tomato sauce. Place 1 jalapeno pepper and 1 serrano pepper in the pot. Bring mixture to a boil and add packet #1.
- Cover and simmer on medium-low heat for 1 hour. Remove peppers, squeeze juice into separate container and set aside. Replace lid and continue simmering meat mixture for another 15 minutes. Add packet #2.
- Simmer, covered, for 30 minutes. Add the juice from the peppers and packet #3.
- Cover and simmer for another 15-20 minutes.
- Serve with chopped onions and grated cheese.

COMPETITION CHILI
This recipe follows the guidelines for the ICS (International Chili Society) cookoff rules. There are no beans allowed in cookoff chili, but feel free to add any type you like if you're making it just for fun.

Steps:
- Combine the canned chili, tomatoes, and beef stock in a medium pot over low heat.
- Combine all the spices together, and add 3/4 of the mixture to the pot. Stir to incorporate.
- Saute the pork with the remaining spice mixture and 2 tablespoons of minced garlic on high heat until just browned, not cooked through. Drain any excess fat and add the pork to the pot. Leave enough grease in the pan to saute the remaining vegetables.
- In the same pan sautee the onion and the red pepper over medium high heat. Once the onions start to turn translucent, add the remaining 2 tablespoons of minced garlic. Saute until the garlic becomes fragrant, then add the vegetables to the pot
- Simmer the chili over low heat for 2 to 3 hours, stirring periodically so the bottom does not burn
- ***TIP*** In order to dice the pork so small, first freeze the larger pieces for a few hours until they are solid, but not so hard that they cannot be cut with your knife.

- -Heat olive olive oil in sauce pan.
- -Add the onion , garlic, green pepper and beef going over medium heat .
- -Gradually add spices, sugar and Worcestershire.
- -Once the meat is browned and onions are clear add everthing else.
- -Simmer for ONE HOUR.
- -You may need to add more beer to maintain
- the proper consistency.
