BRAISED LAMB SHANKS WITH CARROTS, BLACK PEPPER AND MISO

Braised Lamb Shanks with Carrots, Black Pepper and Miso image

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat a Dutch oven over high heat and add the oil. Sprinkle the lamb on all sides with salt and pepper. When the oil begins to smoke lightly, use a pair of metal tongs to arrange the lamb in a single layer in the hot oil. Brown the lamb on all sides, 12 to 15 minutes total. Remove the lamb to a medium bowl.
  • Stir the onions into the grease and sprinkle them lightly with salt. Cook until tender, 5 to 8 minutes. Stir in the carrots, garlic and parsnips. Season with salt and add the brown sugar. Cook until the vegetables become slightly tender, 5 to 8 minutes.
  • Add the vermouth and cook until all of the liquid cooks out, an additional 5 to 8 minutes. Stir in the beef stock, miso paste and mustard. Add the lamb back into the stew. Cover and place in the center of the oven. Cook until the meat is tender when pierced with the tip of a knife, 2 to 2 1/2 hours.
  • Use a large spoon to skim any excess fat or impurities from the surface of the sauce. Taste for seasoning. Stir in the vinegar. Allow to rest for 15 minutes, then top with the coarsely ground pepper and parsley. Serve immediately.

ROSEMARY BRAISED LAMB SHANKS

Lamb shanks are slowly simmered with fresh rosemary, garlic, tomatoes, and red wine. Great served with polenta, or my family's favorite--roasted garlic mashed potatoes--as you need something to soak up the wonderful sauce. A fantastic dish for company, as all the prep work is done at the beginning, and then you just have to wait.

Rosemary Braised Lamb Shanks image

Steps:

  • Sprinkle shanks with salt and pepper. Heat oil in heavy large pot or Dutch oven over medium-high heat. Working in batches, cook shanks until brown on all sides, about 8 minutes. Transfer shanks to plate.
  • Add onions, carrots and garlic to pot and saute until golden brown, about 10 minutes. Stir in wine, tomatoes, chicken broth and beef broth. Season with rosemary and thyme. Return shanks to pot, pressing down to submerge. Bring to a boil, then reduce heat to medium-low. Cover, and simmer until meat is tender, about 2 hours.
  • Remove cover from pot. Simmer about 20 minutes longer. Transfer shanks to platter, place in a warm oven. Boil juices in pot until thickened, about 15 minutes. Spoon over shanks.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Generously season lamb shanks with salt and black pepper.
  • Heat vegetable oil in a large Dutch oven over medium-high heat. Place lamb shanks in the Dutch oven, cook, turning, until browned on all sides, about 10 minutes. Transfer shanks to a plate. Drain off remaining oil and fat so only 1 tablespoon remains in the Dutch oven.
  • Stir onion, garlic, and a pinch of salt into the Dutch oven; decrease heat to medium-low and cook, stirring, until onions are softened and translucent, about 5 minutes. Add tomato paste, chipotle chile powder, ancho chile powder, and ground cinnamon; stir to combine.
  • Pour 1 cup chicken broth over onion mixture. Increase heat to high; when liquid boils, place lamb shanks in Dutch oven. Cover and cook in the preheated oven for 90 minutes.
  • Remove Dutch oven and stir in jalapeno pepper, red bell pepper and 1/2 cup chicken stock; bring to a boil on the stovetop. Return pan to the oven and cook, uncovered, until lamb shanks are fork tender, about 20 minutes. Transfer lamb to plate.
  • Place Dutch oven on the stovetop over high heat; bring liquid to a boil and cook, skimming off any foam, until liquid is reduced and thickened, about 5 minutes. Stir in cilantro; season with salt and pepper to taste. Spoon sauce over lamb shanks and serve.

Prosciutto and Cheese Stuffed Lamb Tenderloin image

Steps:

  • Preheat the oven to 400 degrees F.
  • Using a paring knife, cut a 3-inch wide pocket, about 2-inches deep, into the side of each tenderloin. Season the cavity with salt and pepper. Stuff 1 slice of prosciutto, 1 slice of cheese, and 2 basil leaves into each pocket. Tie 1 piece of kitchen twine at each end and 1 piece in the center of each tenderloin to secure the filling. Season the stuffed tenderloins with salt and pepper.
  • In a large skillet, heat the oil over medium-high heat, add the tenderloins and sear until golden brown, about 3 minutes per side. Transfer the tenderloins to an oiled baking pan. Roast for 8 to 10 minutes or until the internal temperature registers 150 degrees F on an instant-read thermometer for medium-rare.
  • Place the skillet over high heat, add the Marsala wine, and cook for 1 minute, scraping the brown bits that cling to the bottom of the pan with a wooden spoon. Add the chicken stock and cook until the liquid is reduced by half, about 4 minutes. Remove the skillet from the heat and whisk in the butter until melted.
  • To serve:
  • Remove the kitchen twine, slice the tenderloins and arrange on serving plates. Spoon the sauce over the sliced tenderloin and garnish with the chopped basil.

Hearty and aromatic, this braised lamb dish, adapted from my mother, Annette Gertner, takes inspiration from the Middle East by way of Eastern Europe. It simmers mostly unattended and even benefits from being made earlier in the day - or even a day or two in advance - and reheated. The four shanks yield four copious portions. (The recipe will serve six if every guest does not insist on having a bone.) Orzo alongside will sop up the sauce.

Braised Lamb Shanks With Peppers image

Steps:

  • Pat dry lamb shanks. In a heavy casserole or Dutch oven that will hold all the shanks, heat oil on medium-high. Add lamb shanks and brown on all sides, about 10 minutes. Remove to a platter. Season with salt and pepper. Reduce heat to medium-low.
  • Add bell peppers and onions to the pan. Sauté, stirring, until the vegetables wilt and just begin to color, 5 to 6 minutes. Add garlic, dill seed, paprika and cinnamon. Stir. Add stock and wine. Bring to a simmer. Stir in tomato paste and oregano. Season with salt and pepper. Stir in lemon juice. Return lamb shanks to the pot along with any juices on the platter. Cover them with a piece of parchment or waxed paper, cover pot with lid, reduce heat to very low and cook about 2 hours, basting the shanks occasionally and turning them at least once until the meat is very tender when pierced with a knife.
  • Remove shanks from the pot. Increase heat to medium and reduce sauce by about a third, about 10 minutes. Taste and season with salt and pepper as needed. Return shanks to the pot, baste and reheat. Serve directly from the casserole or transfer to a serving dish. Strew with fresh dill before serving.

  • 1.Preheat oven to 325°F. Season the lamb with salt and pepper.
  • 2.Heat 3 tablespoons oil in a pot over medium-high heat. Add the celery, carrot, and onion; cook until very soft, 8 to 10 minutes.
  • 3.Add the tomato paste and cook 1 to 2 minutes. Add the thyme, bay leaf, peppercorns, anchovies, and garlic; cook 3 minutes.
  • 4.Add the wines, vinegar, and sugar; raise the heat to high and bring to a boil. Lower the heat to medium and add the broths. Leave over medium heat while you brown the lamb shanks.
  • 5.Pour the remaining 1/4 cup of olive oil into a sauté pan. Over medium-high heat, brown the lamb shanks well on all sides, using tongs to flip them over.
  • 6.Transfer lamb shanks to a roasting pan and pour the braising liquid on top. Cover with aluminum foil and cook in the preheated oven for 1 hour. Remove the foil and cook 2 1/2 to 3 hours more, turning the shanks over every half hour until the meat is very soft.
  • 7.Remove the shanks from the braising liquid and strain the liquid. Skim any fat that rises to the surface, then use the liquid as a sauce. Serve in shallow bowls atop White Bean Puree.

  • 1 In a Dutch oven just large enough to hold the lamb shanks in a single layer, or another deep, heavy pot with a tight-fitting lid, heat the oil over medium heat. Pat the lamb shanks dry. Brown them well on all sides, turning the pieces with tongs, about 15 minutes. Tip the pan and spoon off the excess fat. Sprinkle with salt and pepper. 2 Add the wine and cook, scraping up and blending in the browned bits at the bottom of the pan with a wooden spoon. Bring to a simmer and cook 1 minute. 3 Add the rosemary and broth and bring the liquid to a simmer. 4 Partially cover the pan. Reduce heat to low. Cook, turning the meat occasionally, until the lamb is very tender when pierced with a fork, about 1 1/4 to 1 1/2 hours. 5 While the lamb is cooking, in a medium saucepan, combine the peppers, butter, and 2 tablespoons of water over medium heat. Cover and cook 10 minutes, or until the vegetables are almost tender. 6 Add the softened peppers and the prosciutto to the lamb along with the parsley. Cook uncovered over medium heat until the peppers are tender, about 5 minutes. 7 With a slotted spoon, transfer the shanks and peppers to the warmed platter. Cover and keep warm. If the liquid left in the pan is too thin, raise the heat to high and boil until reduced and slightly thickened. Taste and adjust the seasoning. Pour the sauce over the lamb and serve immediately.   • If using the gremolata, place the ingredients in a small bowl and stir to combine. Cover and refrigerate until ready to use.Tie the rosemary sprigs, thyme sprigs, and bay leaves together with some twine. Preheat the oven to 325 F.
  • Sprinkle some salt and pepper over the lamb shanks.Heat the oil in a cast iron Dutch oven or heavy oven-proof pot. Generously brown the lamb shanks on all sides and transfer to a plate. Remove all but 2 tablespoons of the oil.
  • Saute the onions, carrots, celery and garlic until softened, 6-8 minutes. Stir in the ground porcini mushrooms. Add the red wine, bring to a boil, and deglaze (scrape up any browned bits on the bottom of the pan). Boil for 2 minutes. Add the remaining ingredients except for the butter and gremolata and stir to combine. Bring it to a boil. Cover with the lid and place the hot pot on the lowest rack in the preheated oven.Bake for 2 ½ to 3 hours or until the meat is very tender, turning the lamb shanks over halfway through. Remove the cover during the last 30minutes of cooking until the lamb shanks are nicely browned on top. Remove the herbs and bay leaves.
  • Transfer the lamb shanks to a plate tented with foil and place in the warm oven with the oven door open. Place the pot on the stovetop. If needed use a slotted spoon to remove any herb sprigs/leaves. Bring the sauce to a boil and stir in 2 tablespoons of butter. Simmer until thickened. Add salt and pepper to taste.Alternatively, to speed up the thickening time, you can dissolve 2-3 tablespoons of cornstarch in 1/4 cup of water and then stir the slurry into the gravy. Bring it to a simmer and stir for a couple of minutes until thickened.Serve over mashed potatoes or creamy polenta with some gravy spooned over and a little gremolata (if using) or a sprig of fresh herbs for garnish. Pour stock mixture through a fine wire-mesh strainer into a large measuring cup; discard solids. Skim remaining fat from surface, and discard. Wipe Dutch oven clean; pour strained stock into Dutch oven.
  • Add peeled garlic cloves to strained stock, and simmer over medium-low until garlic is slightly tender, about 20 minutes, flipping garlic cloves after 10 minutes. Return lamb to Dutch oven. (The lamb can be cooked up to a day ahead. Refrigerate, covered; reheat before proceeding.)
