Steps:

  • Pre-soak rice noodle in warm water for at least an hour, then drain.
  • Cut gai lan into bite-size pieces, peeling and cutting stems.
  • Thinly cut pork, beef or chicken into bite-sized pieces. Add a splash of fish sauce, pepper, and lightly coat with cornstarch.
  • In a frying pan brown the noodles in oil.
  • As you stir-fry the noodles, pour in about 2-4 tablespoonful of thick sweet black soy sauce.
  • Stir thoroughly to coat noodles, remove and set aside on serving plates.
  • Wipe the pan clean and pour in about 2 tablespoonful of oil and lightly brown garlic and black beans.
  • Stir in meat for about a minute, then add in the broccoli.
  • After about 3-4 more minutes, pour in about 1/2 - 1 cup chicken broth and flavor with fish sauce.
  • Bring sauce to a boil and slowly add cornstarch solution, stir until thicken.
  • Pour sauce over noodles, adding a teaspoon or more of sugar if so desired.

1/2 lb beef or 1/2 lb chicken
2 heads gai lan
3 -4 garlic cloves, chopped
4 -8 ounces chicken broth or 4 -8 ounces water
1 -2 tablespoon cornstarch
2 -4 tablespoons sweet black soy sauce
1 tablespoon preserved black bean, lightly rinsed
1/2 teaspoon black pepper
1 teaspoon sugar (optional)
1 tablespoon fish sauce

Steps:

  • Heat 1 tablespoon olive oil in a large skillet over high heat. Add noodles and sauté 2 minutes. Add 1 teaspoon fish sauce and black bean sauce and sauté 1 minute longer. Transfer to a large serving bowl and set aside. Heat 2 tablespoons olive oil in a large skillet over high heat. Add shrimp, broccoli, garlic, and bean condiment and sauté 1 ½ minutes. Add stock, 2 tablespoons fish sauce, oyster sauce, vinegar, white pepper, and red pepper and bring to boil. Slowly add flour/water mixture, stirring constantly to prevent lumps, and return to boil. Pour mixture over cooked noodles and serve.

  • Get everything ready. Peel the shrimp and devein. Cut the prepared squid into bite sized pieces, Slice the carrots into bitesized slices. Slice the mushrooms. Quarter the corn lengthwise. Shape the kale and reduce the leafy green part by folding together along the central leaf spine and cut at an angle from top to bottom as shown in the video. Mix the potato starch with the cold water in readiness. Measure and set out seasonings.
  • If using seafood then boil for 1-2 minutes until the shrimp develop color and then drain and set aside.If using an alternative protein then sauteé to brown and cook about 70% through.
  • Heat the oil over a medium flame until hot and then stir fy the flat wide rice noodles. Add dark soy sauce and mix well in while stir frying to develop color and taste.After 1-2 minutes of stir frying remove the noodles leaving any excess oil in the pan.
  • Give the potato starch a stir again. Add in the vegetables to the pan you just cooked the noodles in, which should still have a little oil left over after draining the noodles. Stir fry for 2 minutes on high heat.ALTERNATIVELYIf you prefer your kale less crunchy then you can stir fry the kale on its own first for a couple of minutes to soften the stems before adding the other vegetables. After adding stir fry all together for another 2 minutes.
