LAZY-DAY LASAGNA

Here's a way to make cheesy lasagna without the fuss that's perfect for a dinner.

Lazy-Day Lasagna image

Steps:

  • Heat the oven to 350°. Put the ricotta cheese, Parmesan cheese and Italian seasoning in the bowl. Stir with the spoon until mixed.
  • Spoon 1 cup of the spaghetti sauce evenly over bottom of the baking dish. Top with 4 of the uncooked lasagna noodles.
  • Spread 1 cup of the ricotta cheese mixture over noodles, using the back of the spoon. Sprinkle with 1 cup of the mozzarella cheese.
  • Spread 1 cup of the spaghetti sauce over mozzarella cheese. Make more layers with 4 lasagna noodles, the rest of the ricotta cheese mixture and 1 cup spaghetti sauce. (Be sure the spaghetti sauce completely covers the noodles.) Sprinkle with the rest of the mozzarella cheese.
  • Bake 40 to 45 minutes or until lasagna is hot in center and cheese is melted. Use the pot holders to take pan out of oven it will be very hot and heavy. Let lasagna cool for 15 minutes. Cut into 4 rows by 2 rows, using the knife.

These is great to make during a cooking blitz especially when you are already making a traditional lasagne. It is easy to cook up some additional noodles and make this at the same time.**

Perogy Lasagna (Oamc) image

Steps:

  • Mix together cottage cheese, egg and onion salt.
  • In another bowl, mix together 1/2 cup cheese, mashed potatoes, bacon bits and onion.
  • Line bottom of a 9 X 13 inch pan with 4 noodles.
  • Spread first mixture evenly on top.
  • Add 4 additional noodles and cover evenly with potato mixture.
  • Top with remaining 4 noodles, remaining cheese and bacon.
  • Bake at 350 degrees for 30 minutes.
  • Serve with sour cream.
  • For best flavour, bake ahead and reheat.
  • *My Husband doesn't really like cottage cheese, so I will often make this with 2 layers of the potato instead of the cottage cheese layer*.
  • **For OAMC: I make as directed and then freeze. (For better flavour bake before freezing) Defrost overnight and bake for 30 minutes at 350 degrees. OR bake from frozen for 1 hour 30 minutes or until heated through.**.

12 cooked lasagna noodles
2 cups cottage cheese

1 teaspoon onion salt
1 1/2 cups grated cheddar cheese, divided
2 1/2 cups mashed potatoes

Lazy No-Bake Lasagna image

Steps:

  • Heat the olive oil in a Dutch oven or large, wide pot over medium-high heat. Add the sausage and cook, breaking up clumps with a wooden spoon, until brown, about 6 minutes. Add the Marinara and 3 1/2 cups water and bring to a boil. Add the pasta, then partially cover and cook, stirring occasionally, until the pasta is al dente and the sauce is coating it nicely, about 16 minutes. Stir in the mozzarella and ricotta, then sprinkle with the Parmesan and basil, and serve.
  • Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring frequently, until it just turns golden, 3 to 4 minutes. Add the tomatoes, Italian seasoning, basil, 1 teaspoon salt and a few grinds of fresh pepper. Bring to a simmer and cook, stirring occasionally, for 7 minutes. Take off the heat and stir in the butter until melted. Add salt and pepper to taste.

Easy Lazy Lasagna image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Pour marinara sauce into the meat. Stir in drained egg noodles, 2 tablespoons Parmesan cheese, onion powder, garlic salt, and Italian seasoning; mix until incorporated.   • Assembly Directions:.
  • In a large bowl, mix cheeses, eggs, parsley, onion powder, basil, and pepper until well blended; set aside.
  • In a medium bowl, mix together spaghetti sauce and cooked ground beef.
  • Line a 12x8x2 inch baking dish with heavy foil.
  • Spread 3/4 cup of the meat sauce on the bottom of the baking dish.
  • Layer 3 uncooked noodles and top with meat sauce.
  • Spread with 1/2 of the cottage cheese mixture and 1-1/2 cups meat sauce.
  • Layer 3 more noodles on top of meat sauce.
  • Spread with remaining cottage cheese mixture.
  • Top with remaining 3 uncooked noodles and remaining meat sauce.
  • Pour water around the edges.
  • Freezing and Cooking Directions:.
  • Place foil lined baking dish in freezer. freeze until firm enough to remove from baking dish. Cover completely with another layer of heavy foil, then place in a gallon sized freezer bag and lable.
  • Repeat process with other two lasagnas.
  • To Serve: Place frozen foil wrapped lasagna back into baking dish originally used.
  • Thaw and bake covered at 375 degrees for 45 minutes.
  • Uncover and bake an additional 15 minutes.
  • Let stand 10 minutes.
  • Serve with parmesan cheese.
  • To bake from the frozen stage, and 30 minutes to total baking time.

Steps:

  • In 12-inch skillet, cook sausage over medium-high heat, stirring occasionally, until no longer pink. Drain well. Stir in pasta sauce and water. Heat to boiling. Reduce heat to low; simmer 5 minutes.
  • In medium bowl, mix ricotta cheese, chives, oregano and egg.
  • In ungreased 13x9-inch (3-quart) glass baking dish or lasagna pan, spread 1 1/2 cups of the meat sauce. Top with half each of the uncooked noodles, ricotta cheese mixture and mozzarella cheese.   • In large skillet cook hamburger & drain. Stir in all cans of tomatoes & seasonings.In a 6 quart crock pot, cover the bottom with some of the sauce. Then place a layer of ravioli across the bottom, then a layer of mozzarella cheese. Continue these layers until all is used, ending with the meat sauce on top. Finish off with some mozzarella cheese and parmesan on top. Cook on low for 4 hours. Turn off & let sit about 15 minutes before you serve.
