LEBANESE SALAD DRESSING

Another recipe from my Cooks of the Green Door cookbook. The recipe was contributed by the Cedars Restaurant. Love dressings with lemon; however,I would probably reduce the amount of olive oil (my preference).

Lebanese Salad Dressing image

Steps:

  • Shake all ingredients in a tightly covered container. Serve over a salad of mixed greens, cucumbers, and tomatoes.

1 -2 garlic clove, minced
1/2 cup fresh lemon juice
1 cup extra virgin olive oil
3 tablespoons of fresh mint, finely chopped
1 teaspoon salt
1/4 teaspoon black pepper

LEBANESE BEAN SALAD

Quick, easy, and tasty. Can be used as a side dish or a snack on it's own. Great as a salad topper. Good with sea salt kettle chips, or toast.

Lebanese Bean Salad image

Steps:

  • Mix fava beans, chickpeas, white beans, parsley, olive oil, garlic, and lemon juice together in a bowl. Season with kosher salt and black pepper. Chill and marinate in refrigerator for at least 2 hours.

1 (15 ounce) can fava beans, drained and rinsed
1 (15 ounce) can chickpeas, drained and rinsed
1 (15.5 ounce) can white beans, drained and rinsed
¼ cup chopped flat leaf parsley, or more to taste
3 tablespoons olive oil
2 cloves garlic, minced
1 lemon, juiced
kosher salt and ground black pepper to taste

Grilled Lebanese Salad image

Steps:

  • Cut tomatoes and mushrooms in half; place in a large bowl. Cut onions and peppers into 1/2-in.-thick slices; add to bowl. Drizzle with 4 tablespoons oil and sprinkle with garlic salt; toss to coat., Place bread cubes in another large bowl. Drizzle with remaining oil. Sprinkle with thyme, oregano, salt and pepper; toss to coat. Thread on metal or soaked wooden skewers., Transfer vegetables to a grill wok or basket. Grill, uncovered, over medium heat for 8-12 minutes or until tender, stirring frequently. Grill bread cubes, covered, over medium heat for 1 to 2 minutes or until toasted, turning occasionally., Coarsely chop the tomatoes, onions and peppers; place in a large bowl. Add the mushrooms, bread cubes, cucumber and basil; drizzle with vinegar and gently toss to coat.

  • Fry the Pita Bread: In a large skillet, heat olive oil on medium heat. Add the pita bread and season with kosher salt and freshly cracker peppers. Cook stirring frequently until the pieces the bread crispy and golden in color, about 5-7 minutes. Set aside.
  • Place the lettuce, tomatoes, cucumbers, green peppers, radishes, green onions and parsley in a large serving bowl. Pour the dressing on top and toss to combine.
