LEEK SALAD WITH MANDARIN ORANGES
I adopted this recipe, and have not yet tried it. The original chef wrote: "My Mom brought this recipe back from one of her jogging meetings with her friends ( zaar of the old days:D). She used to make this for us to eat on crisp bread or toast for dinner. I love this."

TOSSED SALAD WITH MANDARIN ORANGES
This salad goes good with any main dish and is especially nice with BBQ. Easy to carry to picnics or potlucks too! Just 4 ingredients make it fast and easy! Fits into many catagories for the Zaar World Tour especially SW.Taken from a Louisiana Cajun French Church Anniversary Cookbook.

Steps:
- In a large bowl tear lettuce into small pieces.
- Drain oranges and reserve 2 Tbsp of juice.
- Mix reserved juice, vinegar, onion powder and garlic powder with miracle whip until smooth.
- Add drained oranges and onions to lettuce.
- Drizzle miracle whip mixture over all and toss to coat.
- Serve immediately.

A colorful and attractive salad with just the right combination of flavors--we especially love the tanginess from the cider vinegar. Fantastic! I sometimes replace the cashews with roasted sunflower seeds, and the mandarin oranges with raisins--it's great either way! Best made a day ahead of serving.

Steps:
- Chop the broccoli into bite-sized florets.
- Mix together broccoli, red onion, bacon, cashews, mandarin oranges, and mozzarella (if using) in a large bowl.
- In a separate bowl combine vinegar, sugar, oil, and mayo. Whisk in the salt and pepper.
- Pour over broccoli mixture and toss to coat.
- Best if made a day ahead.
