Legendary Jambalaya image

Steps:

  • Heat a large, heavy, dry stockpot or Dutch oven over high heat.
  • Slice the sausage into bite-sized pieces and brown. Remove the sausage from the pan with a slotted spoon and reserve the drippings for the next step.
  • Wash the chicken thoroughly under cold running water, using salt as an abrasive to scrub the flesh. Cut the chicken into ½-inch cubes and brown in the remaining oil. Add a little extra peanut oil, if needed.
  • Return the sausage to the pan and add the onion, celery, garlic and pepper.
  • Saute until vegetables are tender. Add remaining ingredients and simmer for 30-45 minutes for a one pot meal.
  • Or cook rice in chicken broth and simmer about 15 minutes until rice is done.

1 medium onion, diced
2 stalks celery, diced

John's Jambalaya image

Steps:

  • In a large pot over medium-high heat add chickens and cover with water. Bring to a boil. Reduce heat and simmer until the chickens are cooked through. Remove the bones, setting aside the chicken meat and broth.
  • In a large saucepan, fry the ground spicy sausage until cooked through. Set aside.
  • In a large pot over medium heat, fry the bacon until crisp. Add the onions, celery, green and red peppers, and garlic cloves. Cook until the vegetables sweat. Add all seasonings and the hot sauce, to taste. Stir together. Add the chicken broth as needed and bring to a boil. Add the tomatoes, corn, and mushrooms. Add additional spices, to taste. Add the reserved chicken meat, reserved ground sausage, butter, smoked sausage, and ham. Add additional chicken broth as needed and return to a boil. Add the shrimp and continue to cook. When the shrimp are cooked through, determine that there is enough liquid to cook the rice. Add additional chicken broth, if needed. Add the rice and bring to a boil. Turn the heat down to low. The jambalaya is finished when the rice is fully cooked. Serve in large bowls.

Steps:

  • Debone the chicken and add the meat to a medium bowl. Cover and set aside.
  • Bring the chicken stock to a boil in a large pot over medium heat. Add the chicken bones, then reduce the heat and simmer for 20 minutes.
  • Cut the Cajun and andouille sausage into small pieces. Melt the butter in heavy stock pot over medium-high heat, and saute the sausage until browned.
  • Add the seasoning, onion, celery, peppers, and garlic and saute until caramelized.
  • Cut the chicken into bite-size pieces. Strain the bones from the chicken stock and measure 32 ounces of liquid. Stir

2 ounces Creole seasoning
1 1/2 quarts chicken stock
1 cup diced red onion

CAJUN JAMBALAYA

This recipe took me a year to perfect. The secret to making a Cajun jambalaya is to get the right amount of fond, those delicious browned bits left behind from browning your meats, to build the flavor and color of your jambalaya. We're also going to add a little tomato paste for color and flavor.

Steps:

  • For the Creole seasoning: Combine the salt, black pepper, cayenne, garlic powder, onion powder, paprika, white pepper and cumin in a medium bowl.
  • For the jambalaya: Heat 2 tablespoons oil in a 5-quart heavy-bottomed pot or large Dutch oven over medium heat. Rub the chicken with the remaining 2 tablespoons oil and 2 tablespoons of the Creole seasoning in a medium bowl until evenly coated. Add the chicken to the pot and cook until golden brown, about 5 minutes. Transfer the chicken to a large bowl. Add the sausage to the pot and cook until browned, 4 to 5 minutes. Transfer to the large bowl with the chicken. The bottom of the pot should be covered with browned bits.
  • Add the celery, onions and peppers and cook, stirring and scraping the bottom of the pot occasionally, until the onions are translucent, about 3 minutes. Stir in the garlic, bay leaf, cayenne, thyme and 2 teaspoons Creole seasoning. Add the rice and stir once or twice to coat. Stir in the tomato paste, Worcestershire sauce, cooked chicken and sausage and remaining Creole seasoning. Stir in the chicken stock. Bring to a boil, cover and reduce the heat to a simmer. Cook until the liquid is reduced, and you see little holes on the top, about 30 minutes.
  • Use a fork to stir in half of the green onions and fluff the rice. Cover and cook for 10 minutes. Taste and adjust the seasoning. Garnish with the remaining green onions and serve immediately.

Steps:

  • In a large pot, cover chicken with water and add the celery, quartered onion, and the 4 cloves of garlic. Boil until tender, approximately 1 hour.
  • Reserve the stock. Remove the chicken from the bones & either cut, slice, cube or shred.
  • In 5 cups of stock, cook rice until liquid is absorbed, about 25 minutes. The rice should be slightly moist.
  • In a Dutch oven, saute the sausage and ham until slightly browned, about 3 to 5 minutes.
  • Remove the sausage and ham from the Dutch oven and set aside.
  • Add butter to Dutch oven and saute the chopped onion, green bell pepper and parsley until tender, about 3 minutes.
  • Into the Dutch oven, add the chicken, sausage, ham, the 2 cloves of minced garlic, tomato paste, bay leaf, thyme, salt and pepper.
  • Mix, and then add the rice and the cooked shrimp and mix thoroughly.
  • Cook over low heat, stirring constantly, about 15 minutes.
  • Remove bay leaf and serve.
