LEMONY COOLER

Everyone thinks I've gone to a lot of trouble when making this refreshing summer drink, but it's so easy! I also like to make my own pretty ice cubes by adding 1/2 cup lemon juice and a mint sprig to 4 cups water.-Bonnie Hawkins, Elkhorn, Wisconsin

Steps:

  • In a pitcher, combine the grape juice, sugar and lemon juice; stir until sugar is dissolved. Refrigerate until chilled. , Just before serving, stir in club soda. Serve over ice. Garnish with fruit if desired.

Lemon Cooler Cream Cake image

Steps:

  • Prepare cake and bake according to package directions in a 9x13 inch baking dish. With a fork, poke holes all over top of cake.
  • Combine 1 cup hot water and 1 cup cold water with one package of lemon gelatin. Stir until gelatin is dissolved, and pour mixture over cake. Chill in refrigerator until cool.
  • In large bowl stir together milk, vanilla pudding mix and remaining package of lemon gelatin until powders are dissolved. Fold in whipped topping and spread mixture over cake. Refrigerate until serving.

Steps:

  • Preheat oven to 325°.
  • In a large bowl, cream together: sugars, shortening, egg, vanilla and salt.
  • Add the flour and baking powder.
  • Add 1 Tbsp of water and continue mixing until dough forms a ball.
  • Roll dough into 3/4-inch balls and flatten slightly onto a lightly greased cookie sheet.
  • Bake for 15-18 minutes or until light brown.
  • While cookies bake combine 1 cup powdered sugar with the lemonade powder in a large ziploc bag and shake to mix.
  • Remove cookies from the oven and put them in the ziploc bag while they are still hot, shake until all cookies are coated.

  • In a large bowl, beat the butter, oil and sugar. Beat in the egg, egg white, lemonade concentrate and lemon zest. Combine the flour, baking powder, salt and baking soda; gradually add to egg mixture. , Using a cookie press fitted with the disk of your choice, press dough 2 in. apart onto ungreased baking sheets.   • In a large mixing bowl, beat together the butter, granulated sugar, and ¼ cup of powdered sugar on medium-high until fluffy and light, about 3 minutes. Add the lemon zest, lemon juice, egg yolk and lemon extract. Beat until combined.
  • Add ⅓ of the reserved flour mixture to the butter and sugar mixture and blend on low until incorporated. Repeat in two more additions, blending just until the flour is incorporated. Scrape down the sides of the bowl and blend for just a few seconds as needed. Scrape down the sides again and gather the dough into a ball in the bottom of the mixing bowl. Cover and refrigerate the dough for at least 1 hour and up to 24 hours.
  • Preheat oven to 325°F. Prepare 2 baking sheets lined with parchment paper. Roll the dough into 1-inch balls and place two-inches apart on the parchment lined baking sheet.
