LEMON DROP COOKIES

After we'd visited at her house, my sister sent a "care" package for the trip home. Tucked inside were these delightful cookies. Crushed lemon drop candies and grated lemon peel lend to the refreshing taste. -Pat Zimmerman, Midland, Texas

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg, cream and zest. Combine the flour, lemon drops, baking powder and salt; gradually add to the creamed mixture and mix well. , Drop by rounded teaspoonfuls 3 in. apart onto greased baking sheets. Bake at 350° for 8-10 minutes or until edges are lightly browned. Cool for 2 minutes before removing to wire racks.

  • 2. Cook to 310 degrees Fahrenheit.
  • 3. Drop onto cookie sheet that has a layer of powdered sugar on it to cool and harden. Break when hardened.

  • Put sugar and lemon zest in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed 30 seconds.
  • Add butter; mix until pale and fluffy, about 1 minute. Mix in eggs one at a time; add vanilla and lemon extract. Gradually add flour mixture, and mix until just combined. Stir in crushed lemon drop candies.
  • Roll into 1-inch balls (I used a #40 ice cream scoop), flatten slightly and bake on parchment-lined baking sheet for 10-12 minutes until edges start to brown and center is almost set. (The cookies spread quite a bit, so I only baked eight cookies per sheet.) Let cool slightly on pan 1 to 2 minutes. Transfer cookies to cooling racks; let cool completely.

  • Preheat the oven to 350 degrees. Whisk together the flours, starches, baking powder and salt and set aside. Combine the butter and sugar in a mixing bowl and beat until smooth. Add the egg, vanilla, lemon juice and lemon zest. Stir again and then add the dry ingredients and mix until combined.
  • Roll or scoop into 1" balls and place on a parchment paper or silpat lined baking sheet. Baked for 10 minutes, until the cookies are set, but not browned. They will be small, round cookies and shouldn't flatten or spread much at all. Remove from the oven and transfer to a wire rack to cool completely.
  • Slowly add the lemon juice into the powdered sugar, stirring until the glaze can be easily stirred and drizzled or poured. Dip the top of each cooled cookie into the glaze and then place on a wire rack to allow the frosting to set. The glaze should be dry within a few minutes. Transfer the cookies to an airtight container. They should keep well at room temperature for a few days, or in the freezer for up to two months. Enjoy!
