Some days I have little time to make a hearty meal for my "meat-and-potatoes" family. That's why I appreciate this juicy peppery steak. It has a down-home taste and requires no more than minutes to put together!

- Sprinkle steaks with lemon-pepper. Broil in a preheated broiler 3-4 in. from the heat for 5-7 minutes on each side or until the steaks reach desired doneness.

STEAK SLICE WITH LEMON AND THYME
This recipe, or rather the method, was suggested to me by my agent Ed Victor, and so is known familiarly as Ed's Tender Rump. The method is this: instead of marinading the meat before cooking, you marinade it after -- and it really does keep it extraordinarily tender. Please feel free to play around with the herbs; I think Ed himself uses oregano rather than the thyme I love. I love this with broccoletti or those leggy tenderstem broccoli. A couple of packets, lightly cooked and then drained and placed in the marinade after the beef's out and sliced, is the most heavenly accompaniment. And I can't tell you how good both steak and broccoli are cold later.

- Cut away the fat from around the edge of the steak while you heat a griddle or pan.
- Brush the steak with oil to prevent it sticking to the griddle or pan, and then cook for 3 minutes a side plus 1 minute each side turned again (this gives you pretty griddle marks) for desirably rare meat; the lemon in the post-hoc marinade 'cooks' it a little more.
- While the steak is cooking, place the thyme leaves, garlic, oil, lemon zest, juice, salt and pepper in a wide shallow dish.
- Once the steak is cooked, place it in the dish of marinade for 4 minutes a side, before removing it to a board and slicing thinly on the diagonal.
BEEF FILLET STEAKS WITH PEPPER THYME SAUCE
I decided to have a treat the other night and buy some nice thick fillet steaks as we have not had a good steak in awhile. With all the food prices going up so dramatically this one-two time a week enjoyed cut of beef has now become one-two time a month affair, here's hoping food prices come down again soon. This is a simple recipe that pairs well with steak and does not require lots of effort, feel free to serve this with a cheaper cut of beef or with your favourite cut.

- Heat half the oil in a large frying pan, cook beef on both sides, until cooked as desired. Transfer to a warm oven to keep warm.
- If like me you have very thick steaks I find I can not cook them to a medium rare on the stove, without burning the outside so I finish them off in the oven for about 15 Min's, on a higher heat setting.
- Heat remaining oil in same pan, add celery, onion and garlic, cook, stirring until vegetables soften.
- Add wine; stir until liquid is reduced by half, add cream, peppercorns and stock, bring to the boil. Reduce heat; simmer uncovered, stirring occasionally, about 5 Min's or until sauce thickens slightly. Stir in thyme leaves, serve immediately over steak.
- I served mine over celeriac mash and a carrot casserole as a side but serve with your favourite veg and potato.

LEMON-PEPPER STEAKS

- Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat.
- Trim fat on beef steaks to 1/2-inch thickness if necessary. Sprinkle garlic salt over beef. In small bowl, mix butter, basil and lemon-pepper seasoning; brush over beef and bell pepper halves.
- Cover and grill beef and bell peppers over medium heat 12 to 16 minutes, turning once, for medium beef doneness. Brush tops of steaks with butter mixture. Cut bell peppers into strips; serve over beef.

HERBED LEMON PEPPER RUB
I used to be La Madeleine's DFW catering chef, and the production kitchen cooked all the rotisserie chicken, and I did really like the rub they used. This is an approximation of their rub, with a few ingredients of my own thrown in. This is enough rub for one roasting chicken.

- Zest 4 lemons and spread the zest on a cookie sheet lined with parchment paper. Set the oven to its lowest heat setting (the lowest setting of my oven is 100F). Place the zest in the oven and cook until dry and crumbly. For me it takes around 2 hours.
- Mix all the ingredients together and place grind in coffee/nut grinder. I needed to do this in two batches.Pulse the grinder for 15-20 seconds. This allows the peppercorns and coarse salt to grind a bit but still be somewhat coarse.
