LEMON-RICOTTA FRITTERS WITH LEMON CURD
The batter for these cloudlike fritters is flecked with lemon zest for a flavor that's subtle rather than sharp. A side of cool, satiny lemon curd for dipping reinforces the citrus theme -- and almost upstages the main event.

- Make the curd: Prepare an ice-water bath. Combine yolks, granulated sugar, lemon zest, lemon juice, and salt in a medium saucepan. Cook, stirring constantly, over medium-low heat until mixture has thickened and coats the back of a spoon, 9 to 10 minutes. Remove from heat, and add butter, stirring until it melts. Immediately strain through a fine sieve into a nonreactive bowl. Set bowl over ice-water bath, and place plastic wrap directly onto the surface of curd to prevent a skin from forming. Refrigerate until set, about 1 hour (or up to 3 days).
- Make the fritters: Heat oil in a medium saucepan to 350 degrees. Sift flours, baking powder, and salt into a small bowl.
- Mix together eggs and granulated sugar in a large bowl until just combined. Add ricotta, lemon zest, and vanilla, and stir until well combined. Add flour mixture, and stir until smooth.
- Using an ice cream scoop or a tablespoon, carefully drop a few balls of dough into oil. Cook, turning 2 to 3 times, until golden brown on all sides, 2 to 3 minutes total. Adjust heat as necessary to maintain temperature of oil. Drain on paper towels. Repeat with remaining dough. Place on a plate, and dust with confectioners' sugar. Transfer curd to a serving bowl, and serve with fritters.

- In a large bowl, whisk flour, baking powder, lemon zest and salt. In another bowl, whisk eggs, cheese, sugar and extract. Add to dry ingredients, stirring just until moistened., In a deep cast-iron skillet or deep-fat fryer, heat oil to 375°. Drop batter by tablespoonfuls, several at a time, into hot oil. Fry 2-3 minutes or until golden brown. Drain on paper towels. Dust with confectioners' sugar. Serve warm with honey or jam.

- Heat 2-inches vegetable oil in a large, wide, heavy saucepan until it registers 370 degrees F. Whisk together the flour, baking powder, zest, and salt in a bowl. Whisk together the ricotta cheese, eggs, granulated sugar, and vanilla in another bowl, then whisk into the flour mixture. Working in batches, gently drop in tablespoons of batter and fry, turning occasionally, until deep golden, about 3 minutes per batch. Transfer with a slotted spoon to paper towels to drain. Dust generously with confectioners' sugar, garnish with lemon zest and serve with Quick Berry Jam.
- Combine the berries and 1/2 cup of the sugar in a bowl and coarsely mash with a potato masher. Let the berries sit at room temperature for 15 minutes to allow the berries to release some of their juice. Taste for desired sweetness and add remaining sugar if necessary. Transfer berries to a medium saucepan, add lemon juice and cook until thickened, about 5 minutes. Transfer to a bowl, cover and refrigerate until chilled or serve immediately: transfer to a bowl and set the bowl over an ice bath, stirring until jam is cooled.
CITRUS-SCENTED RICOTTA FRITTERS
Astonishingly easy and unbelievably light, that's these dessert fritters. Ricotta whisked into the basic batter is the secret to the airy texture; fresh lemon and orange zest is another great addition for cutting through the richness. They're well worth buying a deep-fry thermometer for if you don't have one already.

- In a large bowl, whisk together flour, baking powder, and salt. In another bowl, whisk together ricotta, eggs, sugar, both zests, and vanilla. Gently fold ricotta mixture into flour mixture until just combined.
- Meanwhile, heat 2 inches oil in a medium heavy-bottomed pot over medium until a deep-fry thermometer registers 350°F. Set a wire rack inside a rimmed baking sheet.
- Working in batches, carefully drop heaping tablespoons of dough into oil. Cook, turning once, until puffed and golden, 3 to 4 minutes a batch. Transfer to rack using a spider or slotted spoon. Let cool slightly, then roll in sugar until coated. Sprinkle with more of both zests; serve immediately.
RICOTTA, LEMON AND HONEY FRITTERS
Quick to make; quick to be devoured! A simple and delicious recipe I found in the June 2002 isue of the 'Australian Good Taste' magazine. 10 minutes preparation time; 10 minutes chilling time; 10 minutes cooking time and undoubtedly less than 10 minutes devouring time! Next time I make these, I'm planning to gently fold in 1/4 cup slivered almonds, or perhaps some ground almonds, before chilling the mixture. Before making this recipe, Sharon123 contacted me to ask me about the amount of flour needed: an ingredient but NOT listed in the ingredients. APOLOGIES! I made these some months ago, then posted the recipe for safekeeping but right now I'm not sure where the magazine is! And I cannot remember what the quantity was! - Place the the ricotta, egg, flour, sugar and lemon zest in a medium-sized bowl and, using a hand-held whisk or an electric beater, whisk until almost smooth. Cover and place in the fridge for 10 minutes to chill.
- Heat the oil in a medium pan, preferably non-stick, over a medium heat, and spoon tablespoons of the mixture into the hot oil; cook, turning often, for 2-3 minutes or until golden brown. Transfer to a plate lined with paper towel, and repeat with the remaining mixture.
- Divide the fritters among the serving plates, drizzle with honey and serve immediately.

- In a bowl combine sugar, ricotta (or cottage cheese), eggs and vanilla essence or vanilla seeds. Combine well using a whisk. In a separate clean bowl combine all-purpose flour, baking powder and a pinch of salt. Stir to combine.
- Add the melted butter (cool) and lemon zest to the ricotta mixture. Stir to combine. Incorporate the dry ingredients (flour mixture) and stir well to get a nice batter.
- In a large frying pan, heat about 5 cm / 2 inches of vegetable oil to 175 °C / 350 °F. Working in batches, drop a tablespoon of batter into hot oil (use two tablespoons to slide the batter into the oil). Fry until golden brown all over and cooked through, for about 5 - 6 minutes. Using a slotted spoon, transfer the fritters to a plate covered with paper towels to drain any excess fat. Continue frying the remaining batter.
- Dust the sweet lemon ricotta fritters with confectioner's sugar and serve, they are best eaten immediately.
