LESKOVAC BURGER

This piece of southern Serbian cuisine is probably the most common of all burgers in the south and around Leskovac (where burgers are in most cases NOT considered junk food). There are likely several ways of preparing this both in terms of ingredients and the grilling process. This is a classic burger recipe I memorized from a burger spot in my town and is best prepared either on the grill, or you can make it in your frying pan with just a bit of oil.

Steps:

  • Peel and chop up both the onions and the garlic in the food processor until they are even.
  • Meld the minced beef and pork with your hands until they are even and then add the onions and garlic. Make sure they are well spread across the meat.
  • Add the mustard and shape the meat well so that the mustard holds the meat, the chopped onions and the garlic like glue.
  • Split the meat into five or six patties and grill between ten and twenty minutes, depending on how you like your meat done. Season with salt and pepper according to taste.
  • You can use any type of bun you like. I personally prefer the homemade "pita" bun. Traditional condiments include chopped raw onions, kaymak, and ajvar/ljutenica. Enjoy!

Steps:

  • In a mixing bowl combine the ground lamb with the cinnamon and season to taste with salt and pepper. Saute a bit of the mixture to taste if seasoning is right or not.
  • Mix the goat's cheese with the chives.
  • Divide the lamb into 4 portions and shape each one into a patty. Press your thumb in the center to create a pocket in the burger. Take about a tablespoonful of the cheese mixture and set it in the indentation. Enclose the lamb patty around the cheese to enclose it completely. Either grill, broil or saute them for about 4 minutes a side.
  • To serve, spread some cole slaw in the center of a dinner plate and spread around. Center lamb over cole slaw and dust top with mint or cilantro and jalapeno pepper.

1 1/2 pounds ground lamb
1/4 to 1/2 teaspoon ground cinnamon
Salt and freshly ground black pepper
1/4 cup soft fresh goat's cheese (or cream cheese for kids)
2 tablespoons chopped chives
Roughly chopped fresh mint or cilantro for garnish
Fine mince of hot jalapeno pepper if you wish

Steps:

  • Blend the onion, ginger, garlic and fresh coriander in a food processor until finely chopped. Add the spices, apricots, lamb and seasoning. Blend until slightly chunky.
  • Shape the lamb mixture into six burgers. Cook under a medium-hot grill for 4-5 mins each side until cooked through.
  • Serve in wholemeal buns with the lettuce, tomato, sliced red onion and mayo.
