Sam's Coconut Crab Cakes with Coconut Basil Mayonnaise image

Steps:

  • Heat oil in a saute pan. Add onion and celery and saute until onion is translucent. Remove from heat and set aside.
  • In a large bowl, mix crabmeat, coconut, mayonnaise, mustard, chives, parsley and 1 cup panko with the onion/celery mixture. Add salt and pepper, to taste. Form into 2-inch diameter cakes.
  • Roll cakes first in flour, then in beaten eggs, then in the remaining 4 cups of panko, each time shaking off excess. Heat oil, and saute the crab cakes until golden brown. Drain on paper towels. Arrange on a platter and garnish with tomatoes and chives. Serve with coconut basil mayonnaise.
  • Combine all ingredients in a mixing bowl, and whisk until smooth. May be prepared a day ahead, covered and refrigerated. Bring to room temperature before serving.

Coconut Crusted Crab Cakes image

Steps:

  • Lime Dipping Sauce, recipe follows
  • Put the crabmeat in a large bowl and add the mayonnaise, scallions, bell pepper, ginger, salt, and pepper and gently combine using a rubber spatula. Add the 1/2 cup coconut and 1/2 cup panko and gently fold in. Divide the mixture into 8 mounds and form into patties about 3-inches in diameter and 3/4-inch thick. Put the patties on a large plate, cover with plastic wrap, and refrigerate 30 minutes or longer.
  • When you are ready to fry the crab cakes, combine the 1 cup of coconut and 1 cup of panko in a shallow container. Lightly dredge the patties in the crumbs, shaking off any excess. Put 2 large nonstick skillets with over medium high heat. Add about 3 tablespoons of oil to each pan. When the pans are hot, place 4 patties in each pan. Turn the heat down to medium and fry the cakes until golden and heated through, turning once with a spatula to brown both sides, about 4 minutes per side.
  • Transfer the crab cakes to plates, serving 2 to each person, accompanied by ramekins of sweet chili sauce and lime wedges.
  • Whisk together all ingredients in a small bowl.

1 pound crabmeat, drained, picked clean of shell, lightly squeezed if wet
1 cup mayonnaise

LIME-AND-COCONUT-MARINATED PEEKYTOE “CRAB CAKES” WITH TOMATO CHUTNEY image

Steps:

  • Make the chutney: Cut a small square of cheesecloth and put the peppercorns, coriander seeds, mustard seeds, cloves, and bay leaf in the middle of the cloth. Gather the edges into a pouch and secure with twine. Heat the oil in a 4-quart heavy-duty non-reactive saucepan over medium heat. Add the onion, garlic, and ginger and cook, stirring occasionally, until soft but not browned, 3 to 5 minutes. Reduce the heat to medium low and add the tomatoes, jalapeño, sugar, and the spice bundle. Cook, stirring frequently, until very thick and most of the liquid has evaporated, 25 to 30 minutes. Season to taste with salt and pepper, discard the spice bundle, and let cool. Make the basil oil: Bring a medium pot of salted water to a boil over high heat. Prepare an ice bath by filling a medium bowl with several inches of ice water. Blanch the basil in the boiling water for 10 seconds. Drain and immediately plunge into the ice bath to cool. Drain again and gently squeeze out any water. Put the basil and the oil in a blender and process until puréed, about 2 minutes. Line a fine sieve with cheesecloth and strain the oil into a small bowl, using a spoon or small spatula to push the oil through the cheesecloth. Discard the cheesecloth and set the oil aside. Marinate the crab: Pick over the crab to remove any cartilage or shells. Work with the crab gently, being careful not to break up the meat. Put the crab in a medium bowl and add the lime juice, basil, shallot, coconut milk, Espelette pepper (if using), a pinch of salt, and a few grinds of pepper. Gently toss to coat and let marinate for about 10 minutes at room temperature. Put the crab in a fine sieve over a medium bowl and drain for at least 5 minutes. finish above

2 tsp. black peppercorns
1 tsp. coriander seeds
1 tsp. yellow mustard seeds
4 whole cloves
1 bay leaf
2 Tbs. canola oil
1/2 cup small-diced yellow onion
1 tsp. minced garlic
1 tsp. minced fresh ginger
3 cups peeled, seeded, and diced fresh tomatoes
1 Tbs. seeded, minced jalapeño
1 Tbs. granulated sugar
Fine sea salt and freshly ground black pepper
For the basil oil:
2 cups loosely packed fresh basil
1/2 cup canola oil
For the crab:
1 lb. peekytoe crabmeat (or substitute jumbo lump or Dungeness)
6 Tbs. fresh lime juice
1/4 cup very loosely packed fresh basil, thinly sliced
3 Tbs. minced shallot
3 Tbs. coconut milk
3/4 tsp. Espelette pepper (optional)
Fine sea salt and freshly ground black pepper
For the garnish:
1/4 cup unsweetened coconut flakes, toasted
6 small fresh basil tops

Steps:

  • Combine the crab, spring onions, chilli and coriander in a large bowl. Heat a small frying pan and toast the sesame seeds. While they're still hot, use a pestle and mortar to roughly grind, then tip into the bowl with the crab. Add the breadcrumbs, egg yolk and seasoning, and mix lightly. Shape into 6 patties and chill for at least 30 mins.
  • For the aïoli, mix the mayonnaise, zests and a squeeze of lemon juice. Heat 0.5cm depth oil in a non-stick frying pan. Dust the crab cakes with a little flour and fry gently for 3 mins on each side until crisp and golden. Drain on kitchen paper. Serve the crab cakes with the zesty mayonnaise, wedges of lime and a few coriander leaves scattered over the top.

  • Preheat oven to 350°. On a lightly floured surface, roll pastry dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate; flute edge.   • For sauce: Whisk ingredients together in a mixing bowl. For Crab Cakes: Melt the butter in a large saute pan over medium heat. Add the bread crumbs, salt & pepper and stir with a large spoon until the butter is fully incorporated. Remove from the heat and let cool. Place the crabmeat in a large bowl and pick through it removing any bits of shell. Add the lemon juice to the crabmeat and toss. Mix in the sour cream, 1/2 cup flour, and the bread crumbs. Form the crab mixture into 6 hamburger size patties, each about 1/2 inch thick. (If the mixture seems too wet, add a little more flour.) Coat each crab cake with flour.
