LIME GELATIN SALAD I
This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

Steps:
- In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
- Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
- In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

- In a small saucepan, bring pineapple to a boil over medium heat. Remove from the heat; stir in gelatin until dissolved. Chill until slightly thickened, about 30 minutes. Stir in cottage cheese and whipped topping. Cover and refrigerate until thickened.

PINEAPPLE LIME DELIGHT

- In bowl, add the water to the Jell-O and mix. Add the softened cream cheese and mix well. Pour into bowl you will be serving in.
- Put in refrigerator till it starts to gel and then add drained pineapples and pecans; mix all together.
- Put in refrigerator again till firmly set. If putting onto plate to serve, can dip bowl in warm water to loosen sides and then tip over and place on plate.

- Dissolve jello in 1 cup hot water and pour into blender. Put blender on medium speed and add 1 cube of cream cheese at a time; blend until smooth.
- Refrigerate until set (NOT FIRM).
- Whip cream and add to jello along with the pineapple; mix well. Pour into mold and refrigerate.

- Mix Cool Whip and cream cheese with a mixer. Fold in pineapple and walnuts. Pour into a dish, garnish with chopped walnuts and chill overnight.
- FOR VARIATIONS: a small package of pistachio pudding (or any other flavor you like), and some small marshmallows can be added to the ingredients above and its taste is excellent, too.
- Another option is to add a small package of lime or lemon jello dissolved in a cup of boiling water. Let it set and add the ingredients above. Serve and decorate with some cherries on top.

- In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. - In a bowl, combine cracker crumbs and butter. Press into an ungreased 9-in. square dish. Refrigerate until firm. , In a bowl, combine gelatin and water; stir until dissolved. Cool to room temperature. In a blender, combine the cottage cheese and sugar substitute; cover and process until smooth. Slowly add gelatin mixture and blend until smooth. Pour into crust.
